Chilli Mushroom without maida | chilli mushroom recipe with step wise pictorial and video method.

An indo-Chinese mouthwatering appetizer, wherein fried Mushrooms and colourful bell peppers are cooked in a chilli based sauce.

Originally this recipe is made using all purpose flour (maida) which is not seen as a healthy Ingredient, especially when it is deep fried.

So we have replaced all purpose flour with some other flour, which not only made this recipe guilt free, but also gluten-free.

AN INDO CHINESE CUISINE

 

This recipe is called indo Chinese cuisine because it has a unique blend of both Indian and Chinese foods & flavors.

Indian vegetables and spices familiar to the Indian tongue are amalgamated to the Chinese sauces make any recipe indo Chinese dish.

ABOUT THE PRESENT RECIPE

 

When it comes to Mushrooms, this is the recipe which has gained maximum popularity, not amongst the adults, but with kids too.

Broadly served in every indo Chinese restaurants in india, this recipe is the first choice of everyone, when it comes to starters.

Tender and moist Mushrooms with earthy flavors when fried to crisp outer layer and tossed in different aromatic sauces, they are sure to create a magic right at the moment when you intake the first bite.

If you ever plan an in-house party, do keep it as your starter and amaze your guests.

TWO TYPES OF CHILLI MUSHROOMS

 

The recipe of chilli mushrooms come in 2 variables :

  • Chilli Mushroom dry
  • Chilli Mushroom gravy

The basic formula of cooking both types of chilli mushrooms is same except the quantity of water.

As the first type is dry, so obviously there will be a very less quantity of water.

Whereas second type of chilli Mushroom with gravy is with more water.

Gravy based chilli Mushroom is more often served as main dish, especially with fried rice.

Whereas dry chilli Mushroom is more like a snack and is served as appetizer.

If you are thinking of shifting from one variety to second, just add more water and increase the amount of Ingredients.

Isn’t it so easy?

NON FRIED CHILLI MUSHROOM

 

Few may not find the deep fried food good to consume but they need not to dishearten by seeing this deep fried version of chilli mushroom.

Though there’s no non-fried chilli mushroom traditionally, but you can always alter the process what suits to you the most.

Once you add ginger and when it turns slightly brown, next add the mushrooms.

Saute them for a minute and cover the pan with a lid.

Once mushrooms are half cooked, then add onion and bell pepper.

Thereafter the further process remains the same.

That’s so convenient, really. 

KNOW ABOUT FEW INGREDIENTS

 

MUSHROOMS

 

Most common variety used to make chilli Mushroom is button mushrooms and we too have used the same.

However you can use baby portabella mushrooms too.

Use the Mushrooms after washing, drying and cutting them into halves or quarters, depending upon their size.

RICE FLOUR

 

In a traditional chilli Mushroom recipe, only all purpose flour is used.

Alternatively you can use whole wheat flour also.

Choice is yours.

BELL PEPPERS

 

Known by the name Capsicum, this is a must Ingredient in this recipe.

Yes, don’t think of using all 3 colours if not easily available to you.

Green is very common and easily available variety of capsicum, so you can use that one solely.

RED CHILLI SAUCE

 

This recipe recieves spiciness through the chilli sauce. If you like to make it more or less spicy, add chilli sauce accordingly.

For a more spicier taste, you can add a dash of ghost chilli.

SESAME OIL

 

Sesame oil is part and parcel of Chinese cuisine, so try to make your chilli Mushroom in the said oil.

But in case you don’t have this oil, you can use any oil you use in your daily routine cooking.

If possible, sprinkle some sesame seeds on the top. This will help to accentuate the taste of the dish.

PRO TIPS

 

  1. The consistency of batter for costing Mushrooms must be thick enough so that Mushrooms can hold them.
  2. For an authentic taste, cook Mushroom chilli in sesame oil.
  3. Use a wide and heavy bottomed pan or wok to saute the veggies. A narrow mouthed utensil will make the stirring uneasy which will lead to not so good results.
  4.  Saute the veggies (bell pepper and onion) on high heat.
  5. In no case, bell pepper and onion should loose their crunch.
  6. Don’t miss to add the slurry (corn flour & water paste) at the end. It will give a nice glaze to the recipe.

STEP WISE PICTORIAL RECIPE

 

PREPARATION OF INGREDIENTS

 

  1. Wash, rinse and cut Mushrooms into 2 halves. If the mushroom is too big, then cut it into quarters.
  2. Wash and rinse the bell peppers. Cut them into squares as shown in picture below.
  3. Likewise cut the onion too in the shape of squares.

FRYING MUSHROOMS

 

  1. Take a bowl and add rice flour, corn flour, salt and black pepper powder. (See notes below)
  2. Add water, very little at a time and keep mixing.
  3. Make a thick but runny batter.
  4. Take few pieces of mushrooms and dip them in the batter for coating.
  5. Put the coated mushrooms in oil for frying.
  6. Let mushrooms fry from all sides until turn slightly golden brown.
  7. Take them out of the oil. Keep aside.

MAKING OF CHILLI MUSHROOM

  1. Add oil in a pan or wok.
  2. Add garlic and saute till it turns slightly brown.
  3. Now add bell pepper and onion. (notes)
  4. Saute on high heat until the sides of onion begin to turn golden brown. Remember don’t let the pepper and onion turn soft. Their crunch should remain intact.
  5. Add soya sauce, red chilli sauce, vinegar, tomato ketchup, salt and sugar. Mix well.
  6. Now add fried mushrooms.
  7. Give a good mix.
  8. In a small bowl add corn flour.
  9. Add water and make a thick lump free slurry.
  10. Add this slurry to the Mushrooms.
  11. Give it a mix until slurry mixed well.
  12. Lastly garnish with spring onion greens.
  13. Chilli Mushroom is ready. Enjoy

Ingredients
  

FOR FRYING MUSHROOMS

  • 200 gram Mushrooms
  • 1/2 cup rice flour
  • 1/4 cup corn flour/corn starch
  • 1/2 tsp black pepper powder
  • 1/2 tsp salt
  • Water as required

FOR MAKING CHILLI MUSHROOMS

  • Fried Mushrooms already done
  • 1 tbsp sesame oil
  • 1 tbsp garlic chopped
  • 1 medium green bell pepper/capsicum
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 2 medium onions
  • 1 tbsp soya sauce
  • 2 tbsp red chilli sauce
  • 1 tbsp vinegar
  • 1 tbsp tomato ketchup
  • 1/2 tsp sugar
  • 1 tbsp corn flour/corn starch
  • 2 tbsp water
  • Salt to taste
  • Spring onion greens for garnish

    Hey Payal, thanks for sharing this lovely recipe. The best part is it doesn’t use maida. I have been trying to find recipes that use healthy ingredients. This one goes up in my list!
