One of the most popular Indo-Chinese appetizer, chilli gobi is a perfect snack for cauliflower lovers.
Crispy cauliflower florets tossed in a spicy, tangy and slightly sweet sauce of chinese origin make this mouthwatering appetizer.
Cauliflower is first coated in flours and then traditionally deep fried to bring out the crispy snack but here we have air fried them for less consumption of oil and rest assured, there will be no compromise on taste and texture. The air fryer helps achieve the crunch with minimal oil, making it a guilt-free treat.
It’s every bite is irresistible which makes it’s a great party snack, evening treat or even a side dish for Indo-Chinese meals.
STEP WISE PICTORIAL RECIPE OF CHILLI GOBI RECIPE IN AIR FRYER
BLANCHING OF CAULIFLOWER
Cut cauliflower into florets of bite sizes.
Add salt and turmeric powder in boiling water alongwith cauliflower florets. Boil 2-3 minutes.
Remove the florets from the boiling water and put in a colander so that the water gets off.
Take a bowl and add rice flour, cornflour, salt, kashmiri red chilli powder and black pepper powder. Give it a good mix.
Add cauliflower florets one by one so that they get coated nicely.
Put the coated cauliflower florets in a single layer in air fryer basket. You can fry cauliflower florets directly in hot oil. Drizzle some oil over them.Air fry @200°C for 15 to 20 minutes or until cauliflower gets crispy and brown. Do shake the basket in between. Take them out.
MAKING OF TEMPERING
Add oil in a pan. When oil turns hot, add garlic and spring onion bulbs. Cook for 2-3 minutes.
Add onion, capsicum, chilies and salt. Saute on high heat for 2-3 minutes. Do not loose the crunch of onion and capsicum.
Add soya sauce, vinegar, tomato ketchup and red/green chilli sauce. Mix well.
Add fried cauliflower florets. Mix well. Cook for a minute.
Serve hot with green chutney after garnishing with spring onion greens.

Ingredients
FOR BLANCHING CAULIFLOWER
- 500 gram cauliflower
- 1/2 tsp salt
- 1/4 tsp turmeric powder
- Boiling water as required
FOR FRYING GOBI
- 1/4 cup rice flour (or maida)
- 2 tbsp cornflour
- 1/2 tsp salt
- 1/2 tsp kashmiri red chilli powder
- 1/2 tsp black pepper powder
- Oil for brushing
FOR MAKING CHILLI GOBI
- 1 green capsicum (cut into cubes)
- 1 onion (cut into cubes)
- 4-5 garlic cloves (chopped)
- 2 Red or green chilies (chopped)
- 1/4 cup spring onion bulbs
- 1 tbsp soya sauce
- 2 tbsp red/green chilli sauce.
- 2 tbsp tomato ketchup
- 1 tbsp vinegar
- Salt to taste
- 1 tbsp oil
