Cashew nut pulao recipe | simple kaju pulao recipe | Kaju wala pulao with step wise pictorial and video recipe.

Cashew pulao, also called by the name Kaju Pulao is a Vegan and gluten-free rice recipe which gets ready in no time with the handful of ingredients.

This is not that your guests always come after informing and if it is lunch or dinner time and you don’t have any thing to cook immediately, this recipe is a saviour.

Although you aren’t dependant on your guests to cherish this delicious recipe and whenever feeling lazy to cook at length, make it and enjoy with any raita or plain curd.

However this pulao is so tasty that you hardly need anything to accompany it.

This Diwali, we got lots of gifts and packs of almonds, cashews and pistachios were amongst them.

Whenever we get dry fruits as gift, we generally preserve them to be used in desserts and other baking needs but this time, the cashews gifted to us were pre-roasted and salted.

These couldn’t be used in desserts otherwise in some savoury recipe or eating as it is.

After eating a bulk of them, we thought of making a recipe out of it and as such  this pulao was born.

INGREDIENTS USED

RICE : we have used basmati rice for the recipe and these were the leftover cooked rice. So this recipe is also a good use of leftover rice.

Although if you wanna try this recipe but don’t have cooked rice, you can make the fresh one.

But make sure that before assembling them with cashews and spices, they must cool down completely. Otherwise your pulao will come out sticky and mushy.

CASHEWS : As already stated, we had pre-roasted cashews for the recipe. But you can use the unroasted one.

Just put a spoonful of oil in a pan and roast the cashews till slightly brown.

ONION BARISTA : Onion Barista is nothing but the fried onions. Yes, onions are fried in oil till they turn dark brown.

You really need not to have them already cooked like us. Make them the moment you are making the pulao.

SPICES : Green chilies, ginger, cardamoms, cloves and cinnamon, all these ingredients make the pulao worth loving.

OIL : We have used refined oil but instead of oil you can also use desi ghee.

We are making this recipe vegan so no desi ghee.

 

 

STEP WISE PICTORIAL RECIPE OF CASHEW NUT PULAO

 

  1. We already had roasted cashews and onion barista. If you don’t have them, make first both and keep aside. Click here for the recipe of onion barista.
  2. Take a pan and add oil.
  3. Add bay leaf, green chillies, cardamoms, cloves, cinnamon and ginger paste. Saute till ginger turns slightly brown.
  4. Add cooked rice, salt, onion barista and cashews. Mix well without breaking the rice.cashew nut pulao recipe
  5. Cover the pan with a lid and let simmer for 2 minutes on low heat.
  6. Dress with coriander leaves/cilantro and cashew pulao is ready.

Serve warm after garnishing with more cashews and onion barista.


NOTES

You can make this pulao with freshly made rice also.

Ingredients
  

1 CUP = 200 ml

  • 2 cups cooked rice
  • 25-30 cashews roasted/cut into halves
  • 1/4 cup onion barista/fried onions
  • 1 bay leaf
  • 2 green chillies
  • 1 tsp ginger grated
  • 2 green cardamoms
  • 2 cloves
  • 1 inch piece of cinnamon
  • Salt to taste
  • 2 tbsp Oil
  • 1 tbsp coriander leaves/cilantro

Instructions
 

  • We already had roasted cashews and onion barista. If you don't have them, make first both and keep aside. Click here for the recipe of onion barista.
  • Take a pan & add oil.
  • Add bay leaf, green chillies, cardamoms, cloves, cinnamon and ginger paste. Saute till ginger turns slightly brown.
  • Add cooked rice, salt, onion barista and cashews. Mix well without breaking the rice.
  • Cover the pan with a lid and let simmer for 2 minutes on low heat.
  • Cashew pulao is ready.
  • Serve warm after garnishing with more cashews, onion barista and fresh coriander leaves/cilantro.

Notes

You can make this pulao with the freshly made rice also.
