NEED OF THE HOUR
This time, we are in the 9th day of lockdown in india. Though essential services are functional but we are preferring not to go out unless emergent.
Bread is the staple food and somewhere it is a must need in the family. Couple of days ago, we made and uploaded the recipe of Eggless Whole wheat bread which was received with great enthusiasm by one and all.
But still was receiving messages from many people that they don’t have yeast at home, so how to make the bread without yeast.
Keeping all those queries in mind, we are here again with another bread recipe.
We can well imagine that this is the high time and people are stuck at their homes with very regular ingredients in hand, which they otherwise use on daily basis.
So not just yeast, but we are here with a bread recipe which are associated with so many ‘No’s’. Count the number of “No’s” hereunder :
NO YEAST
Yeast is the star ingredient in any bread recipe and you can’t imagine baking bread without it. Our recent bread recipe was also made using yeast but the present recipe is not asking you for yeast.
NO CURD/YOGURT
Dough gets fermented with yeast which gives a rise to bread. In the absence of yeast, curd is the second most commonly used ingredient for the said purpose. However this recipe is without curd too.
NO KNEAD
A good kneading of dough is must in making a nice bread. If you don’t knead the dough of bread for a good amount of time, you should least expect the good results. But here, no kneading is required at all.
NO TIME
If you have ever baked bread earlier or know the process, you must be knowing that dough needs to be given a time for fermentation which is called rise.
Not just once, but you need to keep the dough for rise twice. First rise timing ranging between 1 to 2 hours or even more, depending upon climate you live in and second rise time is between 30 to 60 minutes. So in all, bread dough asks for rest of about 3 hours.
Whereas, in the present recipe, you don’t require to put the dough on rest even for a second. Prepare the dough and bake instantly.

MAKING OF BUTTERMILK
- Take milk in a glass and add vinegar in it. You can add lemon juice too. Milk must be at room temperature.
- Slightly mix and keep aside for 10 minutes. Don’t move the glass and let it remain idle.
MAKING OF DOUGH
- Place a sieve over a bowl and put all purpose flour, baking soda & baking powder in it.
- Sieve them into a bowl.
- Add salt, sugar, milk powder and oil in it.
- Mix everything well.
- By now, the milk must have become buttermilk. By slowly adding buttermilk, keep on mixing dough.
- No need the knead the dough. Only keep mixing so that buttermilk gets incorporated well. You will have a very sticky dough.
- Grease loaf pan and transfer dough in it.
- Level the dough with spatula.
- Brush oil over the dough.
- Put the loaf pan in pre-heated oven and first bake @ 180℃ for 30 minutes and when 30 minutes are complete, for further 30 minutes on reducing the temperature to 160℃. In all, bake @180℃ for first 30 minutes and @160℃ for another 30 minutes which comes to total 60 minutes of baking time. However this time may vary depending on oven to oven. So need to keep an eye on bread during the last minutes of baking.
- When the bread turns golden brown, bring it out of oven and brush with melted butter to give a nice shine and glaze to bread.
- By running the knife on the edges of bread, take the bread out of loaf pan while bread is still hot.
- Let bread turn cool completely.
- Cut into thin pieces and use.
NOTES
- If you are already having buttermilk, then you need not to go through the buttermilk making process. Use the one you have.
- Buttermilk is also made by diluting curd. Add little amount of water in curd & wisk. You can use it safely.
- Maida/all purpose flour can be replaced with atta/whole wheat flour. But bread made of atta will be quite dense and heavy.
- You can use both atta and maida in equal quantity i.e. 1 cup atta, 1 cup maida.
- Milk powder is shown as optional but it is highly recommended because it will give good texture to your bread.
- If you don’t have particular loaf pan designed to make breads, use any rectangular cake tin. If don’t have such too, use any cake tin you have. Though you will not get the proper shape of bread, but hardly matters if you love homemade bread.
- You can half or double the quantity of ingredients as per your need.

Ingredients
FOR MAKING BUTTERMILK
- 1 cup + 2 tbsp milk room temp
- 1.25 tbsp vinegar or lemon juice
FOR PREPARATION OF DOUGH
- Buttermilk recently prepared
- 2 cup all purpose flour/maida
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1.5 tbsp milk powder optional
- 1/2 tsp salt
- 1 tsp sugar
- 2 tbsp oil + for greasing

If you want to know more details about handling oven settings, then let us say that every oven is different so can’t make out the details here. Better you refer to google with your brand, model and capacity to get more accurate details.

As we haven’t tried baking bread on gas stove so can’t share our personal experience, but yes, have heard from many readers that they baked bread on gas stove and it came out perfect. You need to bake it on low flame for 30-35 minutes or until top gets golden brown. We have baked a cake in pressure cooker and you can follow the same process.

Dilute the curd in water in the ratio of 1:1. As this recipe is asking for about 1 cup of buttermilk so you mix half cup of curd with half cup of water.
