WHAT IS BHEL PURI?

 

Bhel puri is a kind of savoury vegan chaat made with puffed rice, onion, tomato and few more ingredients including sweet and spicy Chutneys.

This recipe has originated in Mumbai, India but now has become the favourite of entire country.

BHEL PURI OF JAMMU

 

In the streets of Jammu, you will find it with the street vendors, who sell it by roaming here and there.

They carry wares over their head along with a long bamboo stand on their shoulders.

And wherever on the roadside they intend to stand and make bhel puri, they just adjust the bamboo stand and place wares over it.

DIFFERENCE BETWEEN BHEL PURI MUMBAI STYLE AND BHEL PURI JAMMU STYLE

 

1. There are two types of bhel made in Mumbai i.e. Sukhi Bhel and Geeli Bhel.

‘Sukhi’ means dry and ‘Geeli’ means wet.

Only few dry spices goes in Sukhi Bhel whereas in Geeli Bhel, chutneys are also added, which makes bhel wet.

The Chutneys added are sweet sour chutney, spicy red chutney and green chutney.

In Jammu there’s only 1 type of bhel puri is made and that is Sukhi (dry) one.

2. In Mumbai bhel, boiled potatoes too are added whereas no potatoes are added in Jammu bhel puri.

3. Mumbai bhel has puri too. Puri is added by breaking into pieces. Whereas puri is missing in jammu bhel.

4. In Mumbai bhel, cornflakes are not added whereas they are present in Jammu bhel.

INGREDIENTS USED

 

PUFFED RICE : Also called by the name Murmura, Kurmura and Mamra, puffed rice is a cereal made from corn swollen under the effect of heat, just like popcorn.

This is the same puffed rice whose sweet version is used in offering as parsadam to God in temples.

Puffed rice brings a perfect crunch in bhel puri, so is integral part of bhel puri.

CORN FLAKES : corn flakes are one of the most known breakfast cereal famous for weight loss. This Crispy cereal is not only adding crunch to the recipe, but also bringing in its health benefits.

ROASTED SPICED CHANA DAL : This is the same split gram, commonly used in making indian chana dal/curry Chana dal.

We have used the readymade chana dal which is roasted and already spiced. Again, this too adds crunchy effects to the recipe.

SEV : Also known with the name bhujia in jammu, Sev is a popular Indian snack which is made from chickpeas flour paste. Thin noodles are made using kitchen press and deep fried to make sev.

These noodles vary in thickness and the sev used in this recipe is of very thin texture.

The sev used in this recipe is also store bought and the fourth ingredient in a row which is also bringing crisp in the recipe.

TOMATOES : Choose the good quality of red tomatoes for the recipe. These are added by de-seeding them.

Tomatoes not only bring their goodness in the recipe, but also beautiful colour contrast in bhel puri.

ONION : Onion adds a kind of sharpness in bhel puri.

During Navratri when people usually abundan onion (and garlic), vendors replace onion with radish.

GREEN CHILLIES : Generally bhel puri is very spicy and that is brought by green chillies. But if you are making bhel puri for kids, better avoid adding it.

CORIANDER LEAVES/ CILANTRO : These leaves are an indispensable part of Indian cooking, as it brings vibrant green colour and the pleasant aroma.

LEMON : When it is chat recipe, how can you not to think of lemon. This is the one ingredient enough to bring that tongue tingling touch to bhel puri.

SPICE MIX : A combination of salt, red chilli powder and chaat masala, this spice mix will have to be there for ultimate seasoning.

HOW TO SERVE JAMMU BHEL PURI?

 

Though making bhel puri is not a task but you really need to keep certain things in mind when assembling ingredients for making bhel puri.

We are sharing here the way it is served roadside.

Vendors keep puffed rice, corn flakes, chana dal and sev, all in separate packs.

Also keep tomatoes, onion, coriander, lemon and green chilies separate, without cutting them.

They also have a small box having a lid with a hole. This small box carrier spice mix.

To serve bhel puri, they have paper cones which are made up of old magazine pages.

When a customer comes and asks for bhel puri, they take up an empty box, add puffed rice, corn flakes, chana dal and sev.

Then chop tomato, onion and green chilies on the spot and add to the box.

Put some chopped coriander leaves, squeeze lemon and sprinkle spice mix.

Mix everything well with a spoon and add the bhel into paper cones.

PRO TIPS

 

  1. Roast puffed rice for extra crunch.
  2. Don’t premix dry ingredients with wet ingredients. Mix everything together immediately before serving, otherwise, bhel puri will become soggy.
  3. While not serving, keep puffed rice, corn flakes, chana dal, bhujia/sev in airtight container to prevent them from loosing their crunch.

PREPARATION OF INGREDIENTS

 

  1. Dry roast puffed rice on low heat for a minute or 2 to make them extra crisp. Remember that don’t let their colour change while roasting. (See notes below)
  2. Wash the tomatoes very well and cut them into small pieces. (notes)
  3. Finely chop onion, green chilies and keep aside.
  4. Mix all the 3 given splices and keep them separate.

PREPARATION OF BHEL PURI

 

  1. Take a big bowl and add all the ingredients i.e. puffed rice, corn flakes, chana dal, bhujia/sev, tomatoes, onion, coriander leaves, green chillies and lemon juice.
  2. Finally season them with the spice mix.
  3. Bhel puri is ready.
  4. Taste and adjust the seasoning, if needed.

NOTES

  1. You may skip dry roasting puffed rice if you feel that they have enough crunch. Actually roasting is much needed during monsoon season when food items generally loose their crunch.
  2. You may discard the fleshy seeds part of tomatoes and add the remaining. The discarded part can easily be used anywhere in your routine cooking.

  • 1/2 cup Bhujia/sev
  • 2 Tomatoes

  • 2 tbsp Coriander leaves
  • 2 Green chillies
  • Juice of one Lemon
