INGREDIENTS USED
COCONUT MILK : For this recipe we have used homemade coconut milk. However you could use other plant milk or water even but if it is coconut muffins/cake, nothing else could be more better than coconut milk.
COCONUT: We have used fresh coconut for the recipe. Actually to make these muffins, we needed to have coconut milk and we made it at home. After squeezing all the milk out of coconut, the leftover was used in this recipe.
Though the milk was extracted from coconut but still they were so delicious and so coconut-y. So imagine if you use freshly grated coconut, what will be the level of coconut flavours.
OIL : We have used vegetable oil for the recipe but if you have edible coconut oil, feel free to go for it for more intense flavours.
FLOUR : To keep the muffins/cake healthy, we have added whole wheat flour for the recipe. You can use all purpose flour as well or both the flours in 50:50 ratio.
SWEETENER: As this recipe has all the healthy ingredients, so how could the sweetner couldn’t be. This is the reason we used bura sugar which is processed from high quality of sugarcane.
LEAVENING AGENTS : Baking powder, baking soda and vinegar, all work as Leavening agents when it comes to baking. Vinegar when touches baking soda and powder, it reacts and creates air bubbles to the cake, causing the cake light and fluffy.
STEP WISE PICTORIAL RECIPE OF AIR FRYER VEGAN COCONUT MUFFINS WITH COCONUT MILK
1. Add 3/4 cup coconut milk in a bowl and add 1 tbsp vinegar.
2. Mix and rest for 15 minutes.
3. Add 3/4 cup powdered sugar and 1/3 oil.
4. Give them a a mix.
5. Put a sieve on the bowl and add 1+1/2 cup whole wheat flour, 1 tsp baking powder, 1/2 tsp baking soda and 1/8 tsp salt.
6. Sift the ingredients into the bowl.
7. Mix well.
8. Add 1/2 cup shredded coconut.
9. Mix, but don’t overdo.
10. Spoon the batter into greased muffin tins till half.
11. Place the tins in air fryer basket.
12. Air fry @160°C/320°F for 8 minutes.
13. Check by inserting the toothpick and if it comes out clean, its a sign that muffins are properly baked.
14. We made 7 muffins and leftover batter was poured in 6 inches greased cake tin. Put the tin in air Fryer basket.
15. Air fry @160°C for 10 minutes or until toothpick comes out clean.
Air fryer vegan coconut muffins/cake is ready.
NOTES
1. Whole wheat flour can be replaced with all purpose flour.
2. In place of coconut milk, you can add any other plant milk or even water will do.
3. Instead of vegetable oil, feel free to use coconut oil for more deep flavors.

- 1+1/2 Cup Whole Wheat Flour (210 gram)
- 3/4 cup Powdered Sugar of your choice (we used bura sugar) (150 gram)
- 3/4 cup Coconut milk, room temperature (180 ml)
- 1/2 cup Unsweetened Coconut, Fine Shred (80 gram)
- 1/3 cup Oil (80 ml)
- 1 tbsp vinegar
- 1 tsp Baking Powder
- 1/2 tsp baking soda
- 1/8 tsp Salt
