STEP WISE PICTORIAL RECIPE OF AIR FRYER BLUEBERRY MUFFINS RECIPE
1. Take 1/2 cup curd/yoghurt in a bowl and add 1 tsp baking powder and 1/4 tsp baking soda in it. Mix and rest for 5 minutes.
2. After 5 minutes, curd/yoghurt will turn frothy and bubbly.
3. Then add 1/2 cup powdered sugar and 1/4 cup oil.
4. Mix gently without much disturbing the froth.
5. Put a sieve on the bowl and add 1 Cup wheat flour, 1/4 tsp salt and 1/2 cup blueberries. Blueberries are put on the flour so that they get coated with flour and it will prevent them from sinking at the time of baking.
6. Sieve the flour into the bowl.
7. Add 1/2 tsp vanilla essence and mix.
8. Now add coated blueberries.
9. Mix again but don’t overdo.
10. Preheat the Airfryer @150°C/302°F for 2-3 minutes.
11. Pour the batter in the greased muffin tins upto 3/4th level only.
12. Top with some blueberries.
13. Place the tins in Airfryer basket.
14. Airfry at the same temperature for 5 minutes or until you get a brown top.
15. Check by inserting a toothpick and if the toothpick comes out clean, that’s a sign that muffins are properly baked.
Cool completely and enjoy.
NOTES
Bit of the batter was left after filling all the muffin tins, so we have baked that batter in a greased ramekin bowl in pre-heated oven @160°C for 25 minutes.

Ingredients
1 cup = 250 ml
- 1 cup Whole wheat flour (131 grams)
- 1/2 cup powdered sugar of your choice (we used khandsari sugar after powdering)
- 1/2 cup curd/yoghurt (128 gram)
- 1/4 cup oil (60 ml)
- 1/2 cup fresh blueberries (85 grams - do have some little extra for topping)
- 1/2 tsp vanilla essence
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
Instructions
