Doodh Patti Cookies | Milk Tea Biscuits Recipe with step wise pictorial and video method.
Eggless cookies made with whole wheat flour and having the deep flavours of doodh patti compiles these mouth melting biscuits.
Doodh Patti are hindi words which means milk & tea leaves. So doodh patti typically means a tradition tea beverage made without water.
When it comes to tea, it is generally made with a combination of milk, water and few more ingredients but water is there for sure. But doodh patti is something just milk and rest of the ingredients minus water.
Couple of years ago, we made a cake of tea flavour and that was the point when we thought of making the cookies of the same flavour but couldn’t due to no reasons.
Now very recently we thought to give it a final call and here are the results. These cookies are really extremely delicious with all the taste and flavours of tea. This is for the first time that instead of pairing cookies with tea, we are making cookies from tea. Lol.
These cookies have everything that makes them flavourful, be it cardamoms, cinnamon, cloves and ginger. These are all such ingredients which are the part of any tea recipe.
Apart from what has been mentioned hereinabove, you can add anything while brewing which you generally add in making your regular tea.
However you can take 2 liberties here. One, instead of adding fresh ginger, you can use dry ginger powder, which is called sonth and the other one is addition of chai ka masala.
In case you have chai ka masala in the kitchen, you need not to go through each of doodh patti ingredients separately but just add 1 tsp chai masala.
Probably chai masala will make doodh patti more flavourful because of addition of more spices in it.
So if you are a chai lover, this is such a comforting and nostalgic recipe for you to make and enjoy.
As far as the storage of these cookies is concerned, they have a short shelf life because of the presence of milk in them. So keep them in air tight container and better to finish them within 10 days.
STEP WISE PICTORIAL RECIPE OF DOODH PATTI COOKIES
MAKING OF DOODH PATTI
Add green cardamoms, cinnamon, ginger and clove in a mortar.
Crush them coarsely with the pestle.
NOTE : If you are already having chai masala, no need to take these ingredients. Just use 1 tsp chai masala powder.
In a small saucepan, add these crushed spices (or chai masala), milk and tea leaves.
Simmer on lowest heat until reduced and turn dark milky-brown (you should be left with about 3 tbsp).
Strain and leave aside to cool down completely.
MAKING OF COOKIES DOUGH
Take butter and sugar in a bowl.
Whisk until creamy.
Add the brewed milk.
Mix again.
Then add flour, milk powder, baking powder and salt.
Mix them all using your hand.
Bring them together into a dough.
NOTE : If the dough is little dry, you can add 1 or 2 tbsp of milk. Alternatively if the dough becomes loose, you can place the bowl in refrigerator for few minutes until dough comes to right consistency.
Take a lemon sized dough, round it into a ball and arrange on a baking tray lined with greased butter paper or parchment paper or silicon mat. Do it with the entire dough.
Flatten each ball. We have used a greased glass base for the purpose.
To make the cookies more attractive, we have designed then using a toothpick. You can leave the cookies as it is or design in any way you like.
Place the tray in the refrigerator for 30 minutes.
Bake in preheated oven @170°C for 25-30 minutes or until edges of the cookies begin to turn brown. We had to do it twice because of the number of cookies.
Bring the tray out and let cookies cool down completely.

Ingredients
1 cup = 250 ml
FOR THE COOKIE DOUGH
- 1 cup whole wheat flour (135 gram)
- 1/3 cup milk powder (43 gram)
- 1/2 cup unsalted butter (softened - 125 gram)
- 6 tbsp brown sugar (83 gram)
- Pinch of salt
- 1/2 tsp baking powder
FOR DOODH PATTI (BREWED MILK)
- 4 tbsp milk
- 1 tbsp tea leaves/chai patti
- 3 green cardamoms
- Small piece of cinnamon
- Small piece of ginger
- 1 clove
Instructions
