But when we can make a bread completely healthy and that too by following the simple method, why shouldn’t we?

Here we are going to make 100% sooji bread recipe without maida. What to say of maida, this eggless suji bread loaf recipe is free from any other kind of flours as well.

Earlier also, we have made pav for pav bhaji with rawa and they came out so so good. This time we have made a bread with rawa and results are equally amazing.

This soft semolina bread recipe at home came out so beautifully. Golden crust, soft crumb, mild nutty taste, this rawa bread is clearly a winner which can be paired beautifully with butter and jam or can be turned into sandwiches or toast.

So the people who are looking for healthy alternatives to refined flour bread can try this recipe. Not just semolina with yest, but in the past we have made suji bread without yeast as well. In place of rawa, we have made other breads as well, like 100% Atta Bread, Gluten free Ragi Bread or Rice Flour Bread

Step wise pictorial recipe of 100% Sooji Bread Recipe | Semolina (Rawa/Suji) Bread Recipe

Take semolina, salt, sugar, yeast, milk and water in a bowl. Mix well. Cover and rest for 10 minutes.

Now start kneading the dough either with electric beater using dough hook or with your hands.  While kneading, add 1 tbsp oil and keep kneading. When the oil is completely absorbed, add one more tbsp of oil and keep kneading. Knead the dough for atleast 7-8 minutes. Tightly cover the bowl and leave for fermentation for 1 hour at some warm place in the kitchen.

After 1 hour, the dough is turned double in size. Knead it for a minute and shape it into a log. Place it in the greased loaf pan. If the top of uneven, gently smoothen it. Cover and leave for rest for 30 minutes.

After the said period, the bread dough is on full bloom. Give it a milk wash. Bake it in a preheated oven @200°C for 30 minutes. Bring the loaf pan out of oven and apply butter on the top. Take the bread out of the pan without any delay. Let the bread cool down completely on a cooling rack. Cut into slices.

NOTES

  1. If you don’t have fine semolina, slightly grind the coarse one.
  2. If using active yeast, it needs to be activated first in lukewarm milk or water along with sugar. More details here.

Ingredients
  

1 cup = 250 ml

  • 2 cups fine semolina (340 gram)
  • 1.5 tsp instant yeast
  • 1/2 tsp salt
  • 1 tbsp sugar of your choice (we used desi khand)
  • 1/4 cup milk (60 ml)
  • 3/4 cup water (180 ml)
  • 2 tbsp oil
