ABOUT SPINACH RICE

 

This is vegan and gluten-free pilaf/pulao recipe made with spinach puree, rice and few spices.

Spinach rice is a one pot meal made in pressure cooker. However you can make it in Instant Pot or pan also.

Good for your eyes, brain, heart, skin and bones, spinach helps in weight loss, reduces blood sugar and hypertension.

MORE IDEAS ABOUT SPINACH RICE

 

1. We have added spinach by making a puree out of it. However you can add spinach just by chopping it very fine.

Actually puree gets immersed so well and kids don’t get a chance to find out the bits of spinach, that is why adding puree works better for us.

2. Though you are free to add few veggies of your choice like potatoes, peas but we didn’t. Let spinach rice be purely spinach rice.

3. We are cooking rice along with spinach. But in case you have some leftover cooked rice, you can make spinach rice with them too.

Just cook the spinach puree following the method given in this post. Thereafter add cooked rice, mix well, simmer 2 minutes on low heat with lid on. It’s ready.

4. If you don’t have pressure cooker, spinach rice can also be made in Instant Pot or regular pan with a lid.

SERVING SUGGESTIONS

 

Spinach rice goes well with plain yogurt, pickle and/or salad.

You can comfortably add to the kids tiffin.

If you have none of the accompaniment to serve, they taste also best if cherished as it is.

STEP WISE PICTORIAL RECIPE OF VEGAN SPINACH RICE

 

SOAKING OF RICE

 

  1. Wash rice 3 to 4 times until water gets clear.
  2. Add water to rice and soak them for 30 minutes. Keep aside.

 

MAKING OF SPINACH PUREE

 

  1. wash spinach leaves and add to blender.
  2. Add rest of the ingredients mentioned under the head FOR MAKING PUREE.
  3. Grind to fine puree. Keep aside.

MAKING OF PALAK PULAO

 

  1. Add oil in pressure cooker.
  2. Put cumin seeds and let them splutter.
  3. Add roughly chopped onion and cook it till turns brown.
  4. Now add spinach puree, coriander powder, garam masala and salt. Mix.
  5. Cook it for 8 to 10 minutes or until puree begins to leave the sides of cooker.
  6. Drain water from rice and add to pressure cooker.
  7. Add water and mix.
  8. Pressure cook for 2 whistles.
  9. Spinach rice are ready.

Serve hot.

FOR SOAKING RICE

  • 1 cup rice
  • Water for washing
  • Water for soaking

FOR MAKING PUREE

  • 2 cup Spinach/palak
  • 2 green chillies
  • 1 bay leaf
  • 1 star anise
  • Small piece of cinnamon stick
  • 1 green cardamom
  • 2 cloves
  • Small piece of mace
  • 1 inch Ginger
  • 4 garlic cloves
  • 1/4 cup water

FOR COOKING RICE

  • Soaked Rice water drained
  • Spinach puree recently made
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 cup water
