WHAT IS MANGO MASTANI?
A Beverage cum dessert, Mango Mastani is a thick creamy mango shake assembled with candid fruits/tutti fruity, mango chunks, ice cream and loads of dry fruits.
And yes, if you have, don’t miss a cherry on the top.
ORIGIN & HISTORY OF MANGO MASTANI
Hailing from Pune City of Maharastra, India, this is one of the most common street food available in juice/fruit corners of the city.
As per the proprietor of an age-old joint in Pune, his grandfather used to sell this drink to the people and on taking it’s first sip, they used to compliment him by saying ‘Mast Ahe’ means, It is really good.
As the people start falling in love with this drink and found it so beautiful, he took a decision to name this drink after the name of Peshwa’s lover Mastani.
Mastani was the second wife of famous Maratha Peshwa ruler Bajirao (1700–1740 AD) and was considered as the most beautiful woman of her time.
Mango Mastani has become an integral part of Pune’s Culture and now is spread across India.
VEGAN MANGO MASTANI INGREDIENTS
MANGOES : Always prefer to use alphonso mangoes to make the mango mastani. Alphonse mangoes are extremely sweet and pulpy.
In case you don’t get Alphonse mangoes where you live, then use any other variety of mangoes which are having a sweet pulp.
Make sure not to use sour and semi sweet mangoes for mango mastani.
MILK : Traditionally, this recipe is never made vegan. Only dairy whole milk is used in making mango mastani. This is not a raw milk but boiled and cooled one.
As we have transformed this drink to Vegan, so are using homemade coconut milk.
Instead of homemade coconut milk, you can use canned coconut milk or coconut cream.
In case using coconut cream, then dilute it with some water.
Soy milk, nuts milk or oats milk, you can use any other plant milk also. Totally dependent on your choice and liking.
ICE CREAM: We have used dairy free vanilla ice-cream for this dessert.
You can make mango ice cream as well. Actually vanilla ice cream in mango shake brings a balanced flavour whereas mango ice cream makes the mango flavour more intense.
SUGAR : Addition of sugar is optional, totally depends on the sweetness of mangoes, and ofcourse ice cream too is added.
So while you are making mango shake, no need to add sugar at that stage. Once shake is ready, taste it and if feels the need of sugar, then add as per the requirement.
In place of sugar, you can add maple syrup or honey (non vegans only) as well.
TUTTI FRUITY : tutti fruity basically a colourful candied sweet cubes made from raw papaya. However it’s cheat version is also available made from watermelon rind.
This Tutti Fruity is easily available in Indian grocery stores.
In case Tutti Fruity is not available to you, you can use candied fruits of your choice.
NUTS : There’s no compulsion of using a particular variety of nuts. Use anything you want to consume. We added almonds, cashews and pistachios.
To bring a nuttiness, we have roasted these nuts in microwave for 2 minutes, though it is not compulsory to roast them before adding.
SAFFRON: saffron adds a subtly and earthy sweet flavour to the dessert.
CANNED CHERRY: Though we didn’t have it at the time of making this dessert, but it is recommended to use it if you have. Cherry has actually nothing to do with the taste of this dessert other than the fact that it makes the desert more inviting, more enticing and more beautiful.
STEP WISE PICTORIAL RECIPE OF VEGAN MANGO MASTANI RECIPE
MAKING OF MANGO SHAKE
1. Take a blender jar and add 1 cup chilled mango pulp, 3/4 cup chilled coconut milk and 1 scoop Vanilla ice cream.
2. Give it a nice blend without adding any water.
3. Taste and see whether sugar needs to be added or not. Our’s mango shake wasn’t enough sweet, so we added some sugar as per our requirement.
4. Blend again after adding sugar.
FOR ASSEMBLING MANGO MASTANI
5. Take a serving glass and add 1-2 tbsp of mango chunks at the bottom.
6. Further add a tbsp of tutti fruity and a scoop of vanilla ice cream.
7. Pour chilled mango shake leaving some space on the top.
8. Add 2 scoops of vanilla ice cream.
9. Top with mango chunks, roasted nuts and saffron.
Enjoy with a spoon & straw.
NOTES
- Do not add ice cubes while serving this dessert. It has to be thick and creamy.
- If the mango pulp and the coconut milk you used were not chilled, then place the mango shake in refrigerator for chilling.
- Instead of fresh mango pulp, you can use canned mangoes as well.
- Mango flavoured ice cream can also be used in place of vanilla ice cream for more intense flavour.
- In place of coconut milk, you can any other plant milk of your choice.
- If not making it vegan, feel free to use whole milk and dairy ice cream instead of vagan one.
- If intending to serve mango mastani to guests, then only make mango shake ahead of time and place in refrigerator. Assemble only at the time of serving.
- The colour of your mango mastani totally depends on the colour of your mangoes. If the mangoes you are using are not too yellow, feel free to add few drops of yellow food colour, but it is purely optional.

Vegan Mango Mastani Recipe
Ingredients
FOR MANGO SHAKE
- 1 cup Mango Pulp (chilled)
- 3/4 cup coconut milk (chilled)
- 1 scoop Vanilla ice cream (non dairy)
- Sugar to taste (optional)
FOR ASSEMBLING MANGO MASTANI
- Mango shake (recently prepared)
- Vanilla ice cream as required (non dairy)
- 5-6 tbsp Mango chunks
- 5-6 tbsp tutti fruity (or candid fruits)
- Roasted nuts (we used cashews, almonds and pistachios)
- Few strands of saffron
Instructions
MAKING OF MANGO SHAKE
