Vegan Indian fruit Cream recipe | Vegan Fruit salad with cream with step wise pictorial and video method.
Also called by the names Fruit salad with cream or cream fruit salad, this luscious and refreshing dessert that seamlessly combines the rich flavors of fresh fruits with the creaminess of cream.
At its core, Indian Fruit Cream is a celebration of seasonal fruits, each contributing its unique sweetness and juiciness to the medley. This delightful dessert can be enjoyed throughout the year, offering a dynamic experience with every bite.
WHICH CREAM IS USED IN MAKING FRUIT CREAM?
Cream is the canvas of this recipe on which the beautiful and colourful drawing is made using vibrant fruits. This key ingredient not only imparts a luxurious texture but also provides a delightful contrast to the natural tartness of certain fruits.
This indian dessert is traditionally made with whipping cream or regular Amul Cream.
But we wanted to make a vegan version of this popular dessert, so used coconut cream.
Even with coconut cream, this dessert came out so delicious. Yes, it was bit coconut-ty, which the traditional one is not supported to be.
Instead of coconut cream, you can use cashew cream or the tender coconut meat as well.
WHICH FRUITS TO GO IN FRUIT CREAM?
No hard and fast rule as to which fruits can go in the fruit cream.
We have added banana, apple, pomegranate, red grapes, green grapes and papaya.
You can go for any seasonal fruits like mangoes, figs, berries, kiwis, jujubes and sapota (chikoo).
But whatever fruit you are adding, cut that into bite-sized pieces so that the dessert is easy to eat.
Do not add highly acidic fruits like oranges as they do not pair well with cream.
Also, watery fruits like watermelon should be avoided because cream may loose it’s texture by making it runny.
Pineapple is worth negligible because if you do not consume the fruit cream immediately, pineapple has the tendency to make the cream sour.
CHOICE OF SWEETENER?
We have simply added white granulated sugar in it after powdering.
You can also go for maple syrup (if vegan) or honey, in case of vegetarian.
Furthermore, there’s another way also to bring subtle sweetness to the dessert without adding any artificial sweeteners.
Just puree mejdool dates and/or raisins and add to the cream.
You can also mix some pureed sweet fruits like ripe banana or mango with the cream to make it sweet.
IS IT NECESSARY TO ADD NUTS TO FRUIT CREAM?
Nuts are not at all important to add but they do add some delightful crunch and richness to the dessert, bringing yet another layer of texture to this already delectable creation.
We have added almonds after soaking, peeling and dividing them into halves.
Cashews too added after diving into halves.
Small bites of walnuts and green vibrant pistachios took the taste and look of dish to another level.
STORAGE OF FRUIT CREAM
Fruit cream should be consumed the moment it is made but it can be stored for 1 day in refrigerator.
STEP WISE PICTORIAL RECIPE OF VEGAN INDIAN FRUIT CREAM RECIPE
1. Take a bowl and electric beater blades. Although you can use wire whisk as well but that is going to be time taking hardship.
2. Place the bowl and beater in refrigerator for 15-20 minutes to chill them.
3. In the meantime, wash and chop the fruits. You can use any fruits of your choice. We added 1 apple, 1/2 cup green grapes, 1/2 cup red grapes, 1/2 cup papaya, 6-7 Strawberries, 1 banana and 1 pomegranate. Place apple in water till used otherwise it will turn brown. Keep them aside.
4. Remove the skin of 10-12 almonds after soaking them & divide them into 2. Also cut 8-10 cashews into halves and chop walnuts and pistachios. Keep aside.
5. After 20 minutes, add Coconut Cream in the bowl. Cream has to be chilled.
6. Beat the cream with electric beater for a minute so that it turns smooth.
7. Thereafter add 3 tbsp Powdered Sugar and 1/2 tsp Vanilla essence.
8. Start whipping the cream.
9. Whip until you see soft peaks. It may take 4 to 5 minutes with electric beater. If using wire whisk, it may take 10 to 15 minutes.
10. Add all the chopped fruits.
11. Also add almonds, cashews and walnuts.
12. Gently fold the fruits and nuts with coconut cream.
13. Vegan Indian fruit Cream is ready. Serve immediately after decorating with more fruits and nuts or you can chill it in refrigerator before serving.

NOTES
- You can use any seasonal fruits.
- Avoid citrus fruits as they are likely to make the cream sour.
- Also avoid water based fruits like watermelon as they tend to make the cream runny.
- Acidic fruit like pineapple should also be avoided as it is likely to make the fruit cream bitter.

- 1/2 tsp Vanilla essence
FRUITS OF YOUR CHOICE
- 1 apple

- 1/2 cup papaya

- 1 banana
- 1 pomegranate
DRY FRUITS OF YOUR CHOICE (optional)
- 10-12 almonds soaked & skin removed
- 8-10 cashews
- 1/4 cup walnuts
- 2 tbsp pistachios
