WHAT IS SUJI KA HALWA?
Suji Ka Halwa, also called as Rawa Shera or suji halwa, is an Indian sweet dish made with Primarily 4 ingredients i.e. semolina (suji/rava), desi ghee, sugar, and water. However few likes to use milk instead of water.
With just 4 ingredients, you get to have a mouthwatering dessert which you can call a staple dessert in india.
Although it is made almost in every house in india and even offered as parshad in many temples, but you will be surprised to know that this divine dessert is not of Indian origin but has been adopted from Persia.
RATIO OF INGREDIENTS
This is a general concept that suji halwa is always made by using a particular ratio of ingredients.
The most common ratio is 1 part suji, 1 part ghee, 1 part sugar and 3 parts water and we also followed the same principle. But later realized that sugar wasn’t enough.
Don’t think we eat heavily sweet dessert but the sweetness in halwa was quite less, so added 1/4 cup of more sugar, making it total 3/4th. And the sweetness in suji Halwa recipe was too perfect. By perfect, we mean neither too high nor low but the moderate one.
If talking about water, we added 3 parts, as already said and the consistency was too apt. However few people add 4 parts water too.
So, whenever we need to make this suji halwa in future, we are going to follow the ratio mentioned in the recipe card of this our own post and none else, because it gave us a perfect suji ka halwa.
SOOJI KA HALWA IN MICROWAVE
This halwa is such an easy task when made in microwave. You need not to keep on stirring the suji endlessly.
If you are watching the video of this recipe attached in this post and thinking that after every minute, taking the bowl in and out is such a tedious job, so what’s easy and convenient in this recipe.
Then let us please tell you that you really need not to take the bowl out of microwave at every step. You can do everything keeping the bowl inside.
As we are shooting the video of this halwa in oven and so that you can see every step with clarity, we are intentionally taking the bowl in and out.

Then let us tell you that there’s hardly any difference in the taste. You will not be able to differentiate that halwa is made in microwave or stove top.
So don’t think at all about the results of end product if you are trying this recipe for the first time.
A FESTIVE DESSERT & RELIGIOUS CONNECT
Be it any festival or religious ceremony, suji ka halwa has always been an integral part.
Right from Navratri, baisakhi or diwali to birthday or any auspicious occasion in the family, day begins with the making of suji ka halwa almost in every household in india.
If there’s some pooja at home, it is offered as a parsad and is being treated so sacred and divine.
SUJI KA HALWA & NAVRATRI
The festival of Navratri is attributed to Maa Durga which is observed for 9 days twice a year.
Most of the people observe fast for 7 days and after the week is over, it’s a Kanya Pujan on 8th or 9th day when little girls are adored considering them the manifestation of Goddess Durga.
On this day of Ashtami, girls are worshipped by washing their feet and by offering them
They are offered Kala Chana (Black Chickpeas), poori (deep fried flat bread) and Suji ka halwa (semolina pudding). Also you can gift anything to them as per your capacity and capability.
INGREDIENTS USED
SUJI : Suji/sooji called as semolina is the prime ingredient of this recipe. Suji comes in two varieties, big grained and short grained.
For sooji halwa, short grain is the best.
DESI GHEE : This is only the desi ghee used in making this halwa. However few make it in unsalted butter also, but nothing like desi ghee halwa because this is only desi ghee which gives nice aroma and rich taste to this dessert.
SUGAR : White granulated sugar goes perfect in this sooji halwa. However you can add jaggery, brown sugar or cane sugar instead. But do note that the other type of sugar going to impact the colour of your final product.
WATER : Water provides the flowing consistency to sooji halwa. However few people loves to make halwa in milk. But milk makes the halwa more heavy and also affects the colour of halwa, making it whitish. So love to make sooji halwa with water only, rest, choice is your’s.
NUTS : We are using almonds, cashews, raisins and coconut. Feel free to add any of the dry fruits of your choice. Even if you want to keep your halwa nut free, no issues.
GREEN CARDAMOMS : Any dessert is incomplete without cardamom powder. It provides aroma and fragrance to the halwa. You can make this recipe even without green cardamoms but hardly think of skipping it.
SAFFRON : Saffron not only releases its beautiful colour to the dessert but adds a distinct and subtle flavour, which enhances the taste of the dish. If you don’t have saffron, either skip it totally or add a pinch of yellow food colour. Again, choice is your’s.
MILK : Milk here is added just to soak the saffron. If you are not using saffron, there no role of milk to play.

WHY MY SOOJI HALWA TURNS BITTER?
The only reason of suji halwa tuning bitter is the over roasting of semolina. Semolina needs to be roasted only to a moderate point where it turns slightly brown. If you over brown it, it may lead to bitter halwa.
WHY THE SOOJI HALWA COLOUR VARIES?
Different people have different liking for sooji halwa texture and colour. The biggest difference in colour is created by the use of water v/s milk.
Sooji halwa made in water has a deep colour in comparison to halwa made in milk.
Further roasting time of semolina matters. If semolina is under roasted, it will give you a pale coloured halwa.
Also use of saffron/yellow food colour makes a big difference.

CAN I USE MICROWAVE SAFE PLASTIC BOWL?
Plastic bowls, even if they are microwave safe, are never recommended for cooking purpose. They are fine upto reheating the food.
Futhermore, plastic is bad for health and especially when you are cooking in them. So please say No to plastic.
CAN I MAKE SOOJI KA HALWA IN OVEN (OTG)?
No, OTG is only for the baking purpose and we need to cook the halwa and not to bake it. So no OTG.
So let’s learn how to make suji ka halwa in microwave oven.
STEP WISE PICTORIAL RECIPE OF HOW TO MAKE SUJI KA HALWA IN MICROWAVE OVEN
- Add 2 tbsp of milk in a microwave safe small glass bowl and microwave for 30 seconds on high power. Our microwave has high powder of 900 and remember, entire recipe will be made on high power till the end.
- Add few strands of saffron, mix and keep aside.
- Take a big microwave safe glass bowl and add suji in it.
- Microwave for 2 minutes.
- Give it a stir.
- Again microwave for 2 minutes, then stir, microwave 2 minutes, stir, microwave 1 minute and stir. From beginning to end, we have microwaved suji for total 7 minutes and in 4 parts.
- While suji is getting microwaved, it will keep on changing its colour from white to light brown. Also it will stick to the bottom of bowl but no issues. Just scrap it using wooden spatula.
- After 7 minutes of roasting, add melted desi ghee in suji.
- Mix well.
- Microwave for 2 minutes.
- Then add almonds, cashews and coconut. But DON’T add raisins yet, otherwise they will begin to burst.
- Mix them well.
- Microwave for 2 minutes, stir, again microwave for 1 minute and stir.
- Now add sugar, cardamoms, saffron soaked milk, raisins and warm water. Remember, water has to be warm only otherwise with cold water, your bowl may receive cracks.
- Give them a good mix.
- Microwave for 3 minutes, stir, microwave 2 minutes and stir.
Your suji ka halwa in microwave is ready. Enjoy warm.
NOTES
- Suji is dry microwaved/roasted for 7 minutes, in desi ghee for 5 minutes and 4 minutes after adding water.
- You may roast suji for more time if likes halwa of dark colour.
- Roasting and cooking time may vary depending on quantity of ingredients and high power of your microwave. Its already mentioned that over oven’s high power is 900.
- For the accurate ratio, measure the ghee only after melting it.
- If don’t have saffron, then skip the milk and saffron part.
- Instead of saffron, you can add pinch of yellow food colour or even can totally skip colouring halwa.

Ingredients
1 cup = 200 ml
- 1/2 cup Suji/semolina 92g
- 1/2 cup desi ghee 100ml melted
- 3/4 cup Sugar 180g
- 1 tbsp almonds chopped
- 1 tbsp cashews chopped
- 1 tbsp coconut cut into small pieces
- 1 tbsp raisins
- 3-4 green cardamoms crushed
- 1.5 cup warm water 300ml
- 2 tbsp milk
- Few strands of saffron
Instructions
