Recently we got a box of Quinoa from a friend but were unsure about the best recipe because quinoa is generally considered as not so tasty.
And then the idea of these healthy quinoa vegetable cutlets got struck. Actually we simultaneously made Burger buns made out of 3 different lentils and as such wanted to make cutlets for them, which should be equally unique, tasty yet healthy.
This vegan quinoa snack recipe is indeed one of the most easy to make treat, which will equally be loved by adults and kids.
Actually most people don’t find Quinoa tasty because of their natural bitterness. But if Quinoa is handled with the suggested way, it will be so good and mouthwatering.
Washing Quinoa so well will make you get rid of the bitterness. Then soaking and boiling with the right ratio of water makes it worth enjoying.
And not just Quinoa, but the vegetables and the sweet potato are also there adding their goodness to this healthy quinoa appetizer. Step wise pictorial recipe of Quinoa Cutlets Recipe in Air Fryer
Wash Quinoa very well and soak it for 3-4 hours. Drain and transfer quinoa in a pan.
Add water. Boil on medium heat. Let the water completely evaporate. Transfer quinoa in a wide plate and let it cool down.
Add chopped vegetables, onion, ginger and green chilies. Also add cumin seeds, red chilli powder, chaat masala, cornstarch, sweet potato and oil. No need to mix in oil if deep/shallow frying the Cutlets. Mix everything so well and make a kind of dough. Make out cutlets from the dough.
Arrange them in the greased air fryer basket. You can bake, deep or shallow fry them as well. Brush oil on them. Air fry @180° C for 10 minutes. Turn their sides. Apply oil. Again Air fry @180° C for 5 minutes. Quinoa Cutlets are ready.
Enjoy with the dip of your choice. We have made gluten free lentils burgers with these cutlets.
NOTES
- You can soak the quinoa overnight also.
- For boiling quinoa, there’s a set ratio. Quinoa + double the quantity of water.

Quinoa Cutlets Recipe in Air Fryer
Equipment
- Air Fryer
Ingredients
1 cup = 250 ml
- 1/2 cup Quinoa
- 1/2 cup sweet potato or normal potato (boiled & mashed)
- 1 cup mixed vegetables of your choice (we added chopped green beans, cabbage, capsicum & carrot)
- 1 onion (chopped)
- 2 green chilies (chopped)
- Small piece of ginger (chopped)
- 1/2 tsp cumin seeds
- 1 tsp red chilli powder
- 1 tbsp chaat masala (or dry mango powder or lemon juice)
- 3-4 tbsp cornflour/cornstarch
- 1 tbsp oil (avoid if deep/shallow frying)
- 1 cup water
Instructions
