Wash Quinoa very well and soak it for 3-4 hours.
Drain and transfer quinoa in a pan.
Add water.
Boil on medium heat.
Let the water completely evaporate.
Transfer quinoa in a wide plate and let it cool down.
Add chopped vegetables, onion, ginger and green chilies.
Also add cumin seeds, red chilli powder, chaat masala, cornstarch, sweet potato and oil. No need to mix in oil if deep/shallow frying the Cutlets.
Mix everything so well and make a kind of dough.
Make out cutlets from the dough.
Arrange them in the greased air fryer basket. You can bake, deep or shallow fry them as well.
Brush oil on them.
Air fry @180° C for 10 minutes.
Turn their sides.
Apply oil.
Again Air fry @180° C for 5 minutes.
Quinoa Cutlets are ready.
