WHAT IS CHAINSOO ?

 

Chainsoo or Chainsu is a very famous lentil dish made of ground Urad dal or black gram lentils and consists of a lot of proteins.

In general, it is also called by the name Pahadi daal as it hails from the mountain regions.

This dish has a totally earthy flavour which is definitely worth trying.

It is warm in nature, usually made during winters which helps the locals to survive the extreme weather conditions and boost energy.

ORIGIN OF CHAINSU

 

Chainsoo belongs to a State of Uttrakhand, India.

Gharwali is one of the most popular region in Uttrakhand, known for its religious significance, and it is home to several Hindu pilgrimage sites, including the Char Dham Yatra.

Besides a renowned place for its folk music and dance, Garhwali cuisine dominates the whole Utrakhand and one among them is Chainsoo.

OTHER NAMES FOR CHAINSOO

 

Chainsoo is also known as Chainsa, Chaunsa, Chainsoodi, Chains in various parts of Garhwal and Kumaon region of Uttarakhand.

CHAINSOO – A QUICK RECIPE

 

The most amazing part of this recipe is  that it involves no soaking and no pressure cooking like all other lentil recipes. Rather dal needs to be put on cooking immediately.

If you go through the recipe, you will find dal needs to be roasted twice, once in the beginning when it’s whole and secondly after grinding.

As this recipe is from Uttrakhand, so commonly prepared there. People do roast the whole dal, grind it and then put in the air tight containers.

So when there’s a time to cook it, almost half of the work is already done.

HOW TO CLEAN DAL?

 

We have read it somewhere that this dal shouldn’t be washed and cooked directly.

If you are feeling somewhat dissatisfied, then you can clean the dal by rubbing it in a clean kitchen towel.

If still you don’t feel comfortable with cooking it unwashed, then wash the dal and let it turn dry and therefore proceed with the process.

HOW TO SERVE CHAINSOO?

 

This is generally served with rice. You can have them with roti as well.

STEP WISE PICTORIAL RECIPE OF PAHADI DAL CHAINSU RECIPE

 

Take urad dal and put on a clean kitchen towel. Just rub the dal to clean it because for making this recipe, dal is not to be washed. The quantity of dal and all other ingredients is given in the recipe card below.

Thereafter transfer dal to a kadai preferably iron kadai and roast the dal on low to medium heat for 5 minutes while stirring continuously.

Remove the dal from kadai and let it cool down completely.

In the meantime, take a mortar and add coriander seeds, cumin seeds, ginger, garlic and green chilies and crush to coarse paste. Keep aside.

By now, the dal must have been cooled completely. Put the dal in grinder jar and grind coarsely.

Add mustard oil in the same kadai and when oil smokes, add mustard seeds.

NOTE : Traditionally Jakhya (Black Jakhia Seed) or Jakhiya, also known as wild mustard or dog mustard is added in it. But if it not available, you can go for mustard seeds or rai.

When mustard seeds crinkle, add the paste and turmeric powder. Saute until the paste turns slightly brown.

Then add grinded dal and whole wheat flour. Roast for 4 to 5 minutes.

Then add hot water gradually and keep stirring to avoid formation of lumps.

Lastly add salt and mix.

Then put a lid and cook for 20 minutes.

However in between keep stirring the dal at the intervals of 2-3 minutes to avoid sticking of dal to the base.

Finally put some coriander leaves and enjoy.

Ingredients
  

  • 1/2 cup urad dal (whole black gram)
  • 1 tbsp coriander seeds
  • 1/2 tsp cumin seeds
  • Small piece of ginger

  • 1 tsp mustard seeds
  • 2 tbsp whole wheat flour
