Mumbai Masala Pav recipe with step wise pictorial and video method.

MASALA here means the cooked combination of onion, tomato and Capsicum with some spices and PAV is a kind of dinner roll, a staple food from Maharashtra.

So MASALA PAV is the amalgamation of these two food items. On a bed of Pav tossed in butter, masala is laid down and topped with chopped raw onion and coriander leaves makes a mouthwatering dish.

This is one of the most common street food from Maharashtra after Pav Bhaji.

In the present recipe, there are very limited ingredients used so can’t think of replacing any except the colour of Capsicum. Meaning thereby, if you don’t get green Capsicum, then use red or yellow bell pepper.

But can’t replicate onion, tomatoes and pav bhaji masala.

Some suggests that pav bhaji masala can be replaced with garam masala but garam masala doesn’t give that authentic taste what comes from pav bhaji masala. Yes, garam masala makes the dish but not completes the dish.

Furthermore, this recipe is very intent and gets ready in 10 minutes. Many a times when the guests are about to arrive, we immediately prepare this dish and serve with pav.

It is to be noted here that if you don’t have pav at the spur of the moment, you can serve this masala with bread or kulcha also.

STEP WISE PICTORIAL METHOD OF MUMBAI MASALA PAV RECIPE

 

1. Take a medium or large tawa or pan and add 2 tbsp butter in it.

2. Add 1 tsp cumin seeds, 2 chopped green chilies, 1 tbsp ginger garlic paste and saute till paste turns brown.

3. Add 1 chopped onion and saute till onion turns translucent and pink.

4. Then add 1/4 tsp turmeric powder and 1/2 tsp red chilli powder. Mix well.

5. Add 2 chopped tomatoes and 1 chopped capsicum. Mix.

6. Cook on moderate heat until tomatoes and capsicum turn soft and mushy.

7. Put 3 tbsp water in it.

8. Mash to get smooth paste like consistency.

9. Add 3 tbsp pav bhaji masala, 2 tsp lemon juice and cook till you get a dry but spreadable paste. There must not be too much moisture in it.

10. Put 2 tbsp coriander leaves and mix well.

11. Keep the masala aside using a spatula.

12. On the side of tawa or pan, put 1 tsp (for 2 pav) of butter.

13. When butter melts, toss pavs after splitting them from the center.

14. In the middle of pavs, spread some masala.

15. Top with some chopped onion and coriander.

16. Put the top part of pav over the spread masala.

Serve with lemon wedges.

Ingredients
  

  • 1 medium Capsicum (thinly chopped)
  • 2 medium tomatoes (finely chopped)
  • 1 onion (finely chopped)
  • 1 tbsp Ginger garlic paste
  • 2 green chilies (finely chopped)
  • 1 tsp cumin seeds
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 3 tbsp pav bhaji masala
  • 3 tbsp water
  • 2 tbsp butter
  • 2 tbsp coriander powder
  • 2 tsp lemon juice
  • 6 pav
  • butter for toasting pavs

FOR GARNISH

  • Some chopped onion
  • Lemon wedges
  • Some coriander leaves
