It’s an ingredient that rarely tops anyone’s list of favorites, yet it’s a powerhouse of nutrition, offering hydration, aiding digestion and supporting overall well-being.
Today in this post, we have tried to redefine this neglected vegetable into mouthwatering dish which will be cherished by all from children to elders. And they will not get to know that it is made from bottle gourd until they are told deliberately.
Introducing Bottle Gourd Pancakes – a creative and delicious recipe that masks the earthy flavor of Lauki while retaining all its nutritional goodness. These pancakes are flavourful, soft and so well-balanced that even the pickiest eaters won’t guess their secret ingredient.
Not just the bottle gourd, but these pancakes are enriched with nutrient-rich amaranth seeds (rajgira), protein-packed gram flour (besan) and hearty whole wheat flour, resulting in a wholesome versatile dish.

STEP WISE PICTORIAL RECIPE OF LOUKI PANCAKE RECIPE :
Take a grinder jar and add bottle gourd, amaranth seeds, coriander, ginger, green chillies, curd and water.
Grind to a smooth puree.Take out in a bowl.
For making tempering, add oil and when it is hot, add mustard seeds, urad dal, chana dal and cashews.
When dal and cashews turn slightly brown, add curry leaves and let them turn crispy.
Add to the bottle gourd puree and mix.
Now time to add besan and whole wheat flour but little at a time. Keep adding spoon by spoon and keep mixing.
Stop when the puree turns into a thick batter.
Take a pancake pan and apply oil and sprinkle some sesame seeds. In case you don’t have pancake pan, do it in non stick tawa.
Put it on low heat and spread the batter as required.
Let it cook for some time from one side and then flip after dropping little oil on other side as well.
Bottle gourd pancakes are ready. Enjoy with a dip of your choice.
NOTES
- We have used amaranth seeds, besan and wheat flour to make the batter. You may simply use any of the three and not necessarily have all in hand. Instead of these three, you can use semolina as well.

Louki Pancake Recipe is a healthy, flavorful Indian dish made with grated bottle gourd, perfect for breakfast or light meals.
Ingredients
FOR MAKING BOTTLE GOURD PASTE
- 1 cup bottle gourd (cut into pieces)
- 1/2 cup amaranth seeds/Rajgira (or suji)
- 4-5 tbsp gram flour (besan)
- 4-5 tbsp whole wheat flour
- 2 green chillies
- Small piece of ginger handful of coriander
- 1/4 cup curd
- 1/4 cup water
FOR TEMPERING
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp chana dal
- 1 tsp urad dal
- 2 tbsp broken cashews
- 8-10 curry leaves
