Called by different names at different places like Kulthi or kulth in Hindi, Kollu in Tamil, Huruli in Kannada, Ulava in Telugu and Muthira in Malayalam.

STEP WISE PICTORIAL RECIPE OF KULTHI KI KHICHDI RECIPE :
First, thoroughly clean the kulthi, as it is likely to contain stones.
Wash and soak overnight or for 7-8 hours.
After the said duration, take oil in pressure cooker. Add oil and when it turns hot, add cumin, ginger paste and bay leaf.
When cumin splutters, add dry red chilies, turmeric powder, coriander powder, red chilli powder, garam masala and salt. Mix well.
Add kulthi (after draining) and saute for 2 minutes.
Add water and mix.
Cover the pressure cooker and cook for 3 whistles.
When the pressure releases on its own, open the lid and add washed and soaked rice. These rice were supposed to be soaked for 20 minutes before cooking.
Give it a good mix. Again put the lid and cook for 2 whistles.
Remove the pressure cooker from heat and let the pressure release. Now open the lid and kulthi ki khichdi is ready.
Serve hot after putting a dollop of desi ghee (avoid if vegan) along with pickle and papad.

- 1 cup kulthi/horse gram
- 2 cups basmati rice
- 1 bay leaf
- 1 tsp cumin seeds
- 2 tbsp ginger (grated)
- 3-4 dry red chilies
- 1 tbsp coriander powder
- 1 tsp garam masala
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 2 tbsp oil
- Salt to taste
- 5 cups water
- desi ghee (for serving)
