Kulthi Ki Khichdi Recipe | Horse Gram Khichdi Recipe

Kulthi Ki Khichdi Recipe: A wholesome, protein-packed dish made with horse gram, perfect for a healthy and satisfying meal.

Ingredients
  

  • 1 cup kulthi/horse gram
  • 2 cups basmati rice
  • 1 bay leaf
  • 1 tsp cumin seeds
  • 2 tbsp ginger (grated)
  • 3-4 dry red chilies
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 2 tbsp oil
  • Salt to taste
  • 5 cups water
  • desi ghee (for serving)

Instructions
 

  • First, thoroughly clean the kulthi, as it is likely to contain stones.
  • Wash and soak overnight or for 7-8 hours.
  • After the said duration, take oil in pressure cooker.
  • Add oil and when it turns hot, add cumin, ginger paste and bay leaf.
  • When cumin splutters, add dry red chilies, turmeric powder, coriander powder, red chilli powder, garam masala and salt. Mix well.
  • Add kulthi (after draining) and saute for 2 minutes.
  • Add water and mix.
  • Cover the pressure cooker and cook for 3 whistles.
  • When the pressure releases on its own, open the lid and add washed and soaked rice. These rice were supposed to be soaked for 20 minutes before cooking.
  • Give it a good mix.
  • Again put the lid and cook for 2 whistles.
  • Remove the pressure cooker from heat and let the pressure release.
  • Now open the lid and kulthi ki khichdi is ready.
  • Serve hot after putting a dollop of desi ghee (avoid if vegan) along with pickle and papad.
  • Enjoy.
