Karela mathri recipe in oven | Champakali nimki recipe | Champakali karela nimki recipe with step wise pictorial and video method.
Either call by karela mathri or Champakali nimki or Champakali Namkeen, these are the different names for the same snack.
The 2 names are given to one snack because it has a resemblance with 2 things ;
One, bitter gourd, called karela in English and
“Champak” flower (Magnolia champaca)
as this snack is twisted or folded in the shape of bitter gourd and also to resemble the delicate petals or bud-like appearance of a champa flower.
And the word “Nimki” is ofcourse originated from the Hindi word “Namkeen” which means salty or savoury.
Hence the names got the reasoning from the shape and aesthetics.
Although nimki is something you need to have whole of the year as it is the second most consumed and loved snack after cookies. But you must have this during the festive season, especially Diwali.
This nimki is such a recipe which has the tendency to bring all appreciations for you, once you serve it to the guests or pack as a Diwali gift.
Initially when we presented these Mathris to some guests, they inquired about its name. On being told its name & when they tasted, they said, ‘ but it doesn’t have a taste of Karela in it and also they are not even a bit greenish’ ? LOL.
Then they were made clear that these Mathris are named as Karela Mathris only because they carry a shape resembling to Karela and/or chmapakali and otherwise the vegetable Karela or a flower has nothing to do with it.
It’s a tea time savory snack having a crunch at its peak. Although looking quite complex from their appearance, but practically these are more than easy to make. This is not possible to prepare every time something while having a cup of tea, so the best part of these Karela Mathri is that you can make them in bulk and whenever you feel like, enjoy with a hot cup of tea.
Step Wise Pictorial recipe of Karela mathri recipe in oven | Champakali nimki recipe
Take a wide bowl and add whole wheat flour, rice flour and salt together. Also add the carom seeds, black pepper powder, kasuri methi and oil in the flour mixture.
Firstly rub the flour mixture with oil between both of your palms and bring it to a breadcrumbs consistency.
knead a firm dough with the help of water. Apply oil on it.
Cover it with a muslin cloth and set aside for 30 minutes.
Now take a lemon size ball out of the dough & start rolling it on a shelf to the size of a puri (about 4 inches in diameter).
Make slits with a pizza cutter or knife at the outer side making it rectangular.
Then start cutting the middle portion (atleast 1/2 inches distance between the two) leaving out the ends. (look at the picture for better understanding).
Roll from one end to other by sealing the edges tightly but without touching the middle part.
Arrange on a baking tray lined with greased butter paper or silicon sheet.
Bake in the preheated oven @200C for 35-40 minutes or until they begin to turn brown. Alternatively you can Air or deep fry them in hot oil till they turn crispy and golden brown.
Bring them out and let cool down completely.
Enjoy these crispy Karela Mathris with a cup of hot tea and store the rest.
NOTES
- You can increase or decrease the quantity of ingredients as per your need and usage.
- Also you can red chili flakes, cumin seeds, garam masala in the dough for enhancing the flavours.
- Chat is also made with Karela Mathri by pouring curd and other species on it. In such case, avoid adding Kasuri Methi.
