Karela Mathri, also known as Champakali Nimki, is a crispy, deep-fried snack flavored with spices, perfect for festive occasions.

Ingredients
  

  • 1 cup Whole wheat flour
  • 1 cup Rice flour
  • 1 tsp Carom seeds
  • 1/2 tsp black pepper powder
  • 1/4 tsp Baking soda
  • 1 tbsp Kasuri methi
  • 1/4 cup Oil
  • Water as needed
  • salt as per taste

Instructions
 

  • Take a wide bowl and add whole wheat flour, rice flour and salt together. Also add the carom seeds, black pepper powder, kasuri methi and oil in the flour mixture.
  • Add the carom seeds, black pepper powder, kasuri methi ,and oil in the flour mixture.
  • Firstly rub the flour mixture with oil between both of your palms and bring it to a breadcrumbs consistency.
  • knead a firm dough with the help of water.
  • Cover it with a muslin cloth and set aside for 30 minutes.
  • Now take a lemon size ball out of the dough & start rolling it on a flour dusted shelf to the size of a puri (about 4 inches in diameter).
  • Make slits with a pizza cutter or knife at the outer side making it rectangular.
  • Then start cutting the middle portion (atleast 1/2 inches distance between the two) leaving out the ends. (look at the picture for better understanding).
  • Roll from one end to other by sealing the edges tightly but without touching the middle part.
  • Arrange on a baking tray lined with greased butter paper or silicon sheet.
  • Bake in the preheated oven @200C for 35-40 minutes or until they begin to turn brown. Alternatively you can Air or deep fry them in hot oil till they turn crispy and golden brown.
  • Bring them out and let cool down completely.
  • Enjoy these crispy Karela Mathris with a cup of hot tea and store the rest.

Notes

  1. You can increase or decrease the quantity of ingredients as per your need and usage.
  2. Also you can red chili flakes, cumin seeds, garam masala in the dough for enhancing the flavours.
  3. Chat is also made with Karela Mathri by pouring curd and other species on it. In such case, avoid adding Kasuri Methi.
