Khichdi is a South Asian Cuisine which is made with rice, lentils and very basic spices from the kitchen.
Although you can combine any daal with rice but most commonly, it is yellow moong dal, green moong dal and Black gram (whole urad daal) which are used in making khichdi.
We have used green moong daal/lentil in this khichdi recipe which is full of protein and fiber.
Khichdi is an instant food and when you are not in a mood to cook detailed food, this is such a quick substitute, which is so delicious and yummy.
But it is not just an instant food but also seen as a medicine for unwell people, especially upset stomach because it is considered as detoxifying food which keeps the digestive system in order.
After milk, when the toddlers begin to eat solids, this is mostly the khichdi which is given to them. Yes, the consistency of that khichdi is made more runny by adding extra water.
But as a regular meal, this is always the right consistency like a pulao.
GREEN MOONG DAL KI KHICHDI IN PAN
Although this is always a pressure cooker which is used in India for making Khichdi but in case you don’t have pressure cooker, then still can try this recipe in a pan. Yes that is going to be time taking but still you get the good results.
For making khichdi in a pan, you need to add the same spices and other ingredients initially and then add dal and water. Cover the pan and cook the dal till it is 90% cooked. You can check this by opening the lid and pressing the dal. Once dal is 90% done, add rice. but at that time, there must be double the quantity of water left in the pan. Again put the lid and cook till rie and dal is 100% cooked.
SERVING SUGGESTIONS
There’s a common saying in Hindi :
Khichdi ke Chaar Yaar
Dahi, Papad, Ghee, Aachar
Meaning thereby
Khichdi has four friends
Curd, papad, clarified butter and pickle.
So this saying says that Khichdi, of whatever kind it is, is always eaten with desi ghee, curd, papad and pickle.
Although everyone has his personal choice and you can eat it the way you like.
Even vegans can also eat it as the main recipe has no dairy products. If you think that ghee and curd is mentioned in the post then please note that these two dairy products are only suggested as an accompaniment and they are not the part of khichdi making.
So just chill and enjoy this vegan and gluten-free indian delicacy.
