Eggless walnut cookies recipe with step wise pictorial and video method.
There’s a trend of gifting walnuts by the Kashmiri pandits community, after the mahashivratri festival in jammu and kashmir.
The significance of walnuts in mahashivratri is that walnuts are worshipped as a symbolic of Lord Shiva. Walnuts are considered as auspicious and believed to be favourite of Lord Shiva.
These Walnuts are soaked in water and when the festival of shivratri is over, they are distributed to family and friends as parsadam.
So every year, I get lots of Walnuts after shivratri is over from my sister in law, who is from kashmiri pandits community.
In addition to using Walnuts in some of the desserts and cakes, I love to bake these mouth melting walnut biscuit recipes every year.
ABOUT THESE COOKIES
√ These walnut cookies are eggless.
√ Healthy being made of whole wheat flour and cane sugar.
√ Crispy yet mouth melting.
√ Vegetarian but can be transformed into vegan easily.
INGREDIENTS USED
WALNUTS : Being walnut cookies, walnuts are supposed to be there in the recipe and it is no surprise. But we have tried to incorporate walnuts in such a way, that one should feel the taste and texture of the same in every single bite.
Initially walnuts are incorporated in the powdered form. Reason being their presence should be felt throughout till the cookies are in your mouth.
Secondly in roughly chopped manner. Walnuts in such a shape will provide a crunch here-n-there, bringing great experience of these cookies.
And lastly, over the top of cookies to give you the best feel of walnuts presence underneath every bite.
CANE SUGAR : We have used cane sugar to give a healthy touch to our cookies. But you are not bound to go by cane sugar only.
Instead, you can use refined sugar, jaggery or jaggery powder also. The purpose is to provide sweet content to our cookies.
WHOLE WHEAT FLOUR : Again a healthy punch. And again you are not forced to go for wheat flour only.
Wheat flour can be replaced with all purpose flour or both the flours in the ratio of 50:50.
BUTTER : In our recipe, the fat content is being provided by the butter. Cookies cannot take their shape and texture without the fat content.
However some prefer to use desi ghee or oil in place of butter but we have not experienced with the said ingredients ever.
GREEN CARDAMOMS : Usually the essence is used in cookies for the purpose of fragrance and aroma. But we have used cardamoms, which too works as a freshener.
SALT : The use of salt is least heard in sweet recipes but don’t take it by surprise. A pinch of salt is much helpful in enhancing the taste of desserts.
Do remember, if the butter is already having a salt, then no need to add this extra pinch.
MILK : Milk here is used as a binding agent only. Use it only if your dough is not coming together. So the quantity of milk purely dependant on the spot situation and it can’t be suggested by means of mentioning the exact amount.
WHY COOKIES DOUGH NEED TO BE REFRIGERATED?
This head is not important to the cookies in this post only, but whenever and whichever cookies you are baking, refrigeration of the dough is must and not to be missed step.
Refrigeration solidifies the fats and as a result cookies retain their shape and don’t fell flat while baking.
Yes, the only relaxation you can give to your dough is 15 minutes depending upon whether conditions of your place. In winters, the climate is already cold so even if you rest dough in refrigerator just for 10 to 15 minutes, that is enough. But to the contrary, refrigeration for at least 30 minutes is must in summers.
VEGAN OPTIONS
This recipe has only 2 ingredients which are non-vegans i.e. butter and milk.
To make them vegan walnut cookies, replace butter with some plant based butter and milk with any vegan milk.
HEALTH BENEFITS OF WALNUTS
Walnut is such a super food which we should add to our diet for lots of reasons enumerated below :
1. Walnuts are full of fiber, minerals and vitamins. They provide healthy fats to the body.
2. If you are looking for plant based omega-3 fat, then walnuts are a good source. It helps in reducing heart disease risk.
3. Many chronic diseases causes due to inflammation. Walnuts help in decreasing inflammation.
4. Walnuts are too good for weight watchers. Though they have lots of calories, but they help in controlling appetite and hunger. By controlling your weight, walnuts help in treating diabetes, cholesterol and high blood sugar and high blood pressure, which are the main causes of being overweight.
STORAGE OF WALNUT COOKIES
These cookies stay good for about 2 weeks in an airtight container. But put them in container only when they are completely cool. Warm cookies if stored, will turn soggy.

STEPWISE PICTORIAL RECIPE OF HEALTHY WALNUT COOKIES
- Put sugar and cardamoms along with 1/4 cup of walnuts in a grinder jar and grind them to a powder. Keep aside.
- Take a bowl and by using electric beater, whisk the butter untill creamy. In case you don’t have electric beater, you can use wire whisk also. In 2 to 3 minutes using electric beater, butter will turn fluffy and creamy.
- Add grinded sugar & walnuts mixture into a bowl.
- Whisk them again to mix well.
- Now add wheat flour, chopped walnuts, baking soda and salt. Skip salt if the butter you are using is already salted.
- With the help of your hand, start bringing everything together into a dough. Remember, don’t knead the mixture but only bring it together.
- Add a very little of milk in case the mixture is not binding together. We only need to add about 2 tsp of milk for making a dough.
- Make small lemon size pieces of the dough. We could made 18 pieces.
- Now roll each piece into a ball by rolling them between your palms one by one.
- Arrange all balls on a baking tray lined with greased butter paper or parchment paper. See, keep distance in each ball as they will spread a little on baking.
- Take 2 pinches of crushed walnuts and press gently on the top of ball. Repeat the same for all balls. Don’t put much pressure otherwise balls may break.
- Place the tray in refrigerator for 30 minutes.
- After the said period, bake @160°C in a preheated oven in the middle rack with both the rods on for 25 to 30 minutes.
- Once done, take the tray out and let cookies cool down completely
- Walnut cookies are ready.

Instead of cardamoms, you can add vanilla essence.

1 cup = 200 ml
- 1/4 cup walnuts 30 g
- 1/2 cup cane sugar 100 g
- 2 green cardamoms
- 1/4 cup butter 50 g/half stick
- 3/4 cup whole wheat flour 115 g
- 2 tbsp walnuts roughly chopped
- Pinch of salt
- 1/2 tsp baking soda
- 2 tsp milk more or less
- 1 tbsp crushed walnuts for garnish
