Christmas, one of the most exciting and much awaited festival celebrated across the globe.

On every part of the earth, there might be different ways to celebrate this auspicious occasion but there’s one thing which is universal and that is Christmas Fruit cake.

Christmas without christmas cake is like sun without heat, moon without light and sea without water.

Undoubtedly, there are different ways to make this cake like vegan & vegetarian, with & without eggs, with juice or alcohol, instant or long term, but the fact is Christmas Fruit Cake is & has to be there to complete the zeal of Christmas.

Fruitcake has its roots around since ancient Roman times. It used to be made by the mix of barley mash, pomegranate seeds, pine nuts, raisins, and honeyed wine. And it used to be called called by the name Satura.

VEGAN CHRISTMAS FRUIT CAKE RECIPE

 

We celebrated the 2020’s Christmas with the vegan fruit cake having no dairy obviously. And that was one of the best vegan christmas cake recipe. Find here that vegan christmas cake recipe.

But this year, we have decided to bring a variation in the said cake.

Now we are going to have this Christmas fruit cake made with dairy products but without eggs.

CHRISTMAS CAKE AND CHOICE OF FRUITS AND NUTS

 

Christmas cake and the fruits & nuts are the real soulmates. Though sometimes, this cake is mentioned as Christmas Cake instead of Christmas Fruit cake, but this is obvious that if the cake is for Christmas, this is going to be a Fruit cake.

You must be aware that these are the dehydrated fruits which go in soaking and not the fresh one.

But if you are interested in making a cake with fresh fruits, have a look at this recipe, though this is not the authentic traditional recipe of Christmas fruit cake.

There’s no strict rule as to which fruits and nuts should go in christmas cake. It is purely dependent on the availability of both in your city.

You can add all from dried apple, plum, pineapple, strawberry, blueberry, Mango, kiwi, cherry, cranberry, prunes, papaya, black raisins and sultanas, black or red currants, candid peels, tutti fruity, almonds, pecans, dates, cashews, pistachios, walnuts, apricots and figs, the list can go endlessly.

CHRISTMAS CAKE & SOAKING OF FRUITS

 

Making of Christmas cake begins with the soaking of fruits.

Furthermore, along with fruits, nuts also go into soaking. But few don’t add the nuts in juice and the idea behind is that nuts loose their crunch if soaked.

We personally feel like soaking the nuts because they absorb the flavour of juice and make the cake more intense more fruity.

For soaking the fruits and nuts, some use alcohol and others use Fruit juice.

Rum, brandy, whiskey, Sherry or Wine, anyone can go for soaking.

And if talking about fruit juice, this is the orange juice which is widely used. Then comes the Grapes juice, Cranberry juice, apple juice or mix fruits juice.

At times, Black tea decoction is also used for the same purpose.

FOR HOW LONG FRUITS CAN BE SOAKED?

 

If you are using alcohol to soak the fruits, then you have a long, rather very long time in hand to soak the fruits.

Can’t figure out the exact time span, but yes we have seen the people soaking fruits in alcohol for a period of 2 years or more.

This might sound crazy but that’s the fact.

And in case you are using fruit cake for the soaking purpose, then the maximum duration is 2 months and minimum is instant.

STEP WISE PICTORIAL RECIPE OF BEST EGGLESS CHRISTMAS FRUIT CAKE RECIPE

 

SOAKING OF DRIED FRUITS

1.Take a bowl and add all the dried fruits and nuts.

2. Pour cranberry juice and mix well.

3. Cover with a lid and keep overnight or for 7-8 hours in refrigerator.

4. Next day, hours before making cake, take out the soaked fruits from refrigerator and let them come to room temperature.

MAKING OF CARAMEL SOLUTION

5. Add sugar in a non stick pan and put on low heat.

6. Stir it continuously until sugar is caramelized.

7. Pour hot water, very carefully, in the caramelized sugar and mix well.

8. Caramel solution is ready. Keep aside and let it come to room temperature.

FOR MAKING CAKE

9. Take a bowl and add milk, butter, caramel solution and sugar. Mix well.

10. Add soaked fruits (without draining any juice) and mix well.

11. Put a sieve over the bowl and add flour, baking powder, baking soda, cocoa powder, salt, cinnamon powder, ginger powder, nutmeg powder, star anise powder and cloves powder.

12. Sieve all these ingredients into the bowl.

13. Mix them well using a cut & fold method.

14. Transfer the batter into 9 inches cake tin lined with greased butter paper or parchment paper.

15. Level the batter using a spatula.

16. Top the cake with mixed fruits and nuts.

17. Bake in a preheated oven @160°C/320°F for 60 to 70 minutes in the middle rack of oven with both the rods on.

18. Take the cake out and insert a toothpick in it. If cake comes out clean, this is a sign that cake is properly baked. But if toothpick has some sticky batter, means cake is under baked so need little more baking.

19. Let cake cool down completely on a cooling rack.

20. Invert, cut into slices and enjoy.

NOTES

  1. You can use any fruits and nuts of your choice and as per availability.
  2. Whole wheat flour can be replaced with all purpose flour.
  3. Instead of cranberry juice, you may use orange juice, grape juice or mix fruits juice also.
  4. In place of cane sugar and shakkar, you can use regular refined sugar.
  5. Oil is an option to butter.
  6. Let the ingredients (soaked fruits & nuts, milk and caramel solution) should come to room temperature before using.
  7. Baking time may vary from oven to oven. So you need to check your cake before taking the final call.
  8. Do not fill up the baking tin till the top but only up to 3/4th because on baking, batter will flow out of the tin. In case you have a cake tin smaller than 9 inches, keep some muffin cups handy and pour some batter in them.
  9. This cake can be baked in microwave convection mode also on the similar temperature and same duration.

Ingredients
  

1 cup =200 ml

    FOR SOAKING FRUITS

    • 1 cup/170 gm dried fruits (includes cranberry, strawberry, kiwi, mango, blueberry, tutti fruity & dates)
    • 1 cup/145 gm nuts (includes cashews, pistachios, almonds, walnuts, raisins, melon & pumpkin seeds)
    • 1 Cup Cranberry juice (or orange juice)

    FOR MAKING CARAMEL SOLUTION

    • 1/4 cup Sugar (We have used cane sugar. You can use refined sugar also)
    • 1/4 cup hot water

    FOR MAKING CAKE

    • 2 cup whole wheat flour
    • 1/2 cup powdered sugar (we have used shakkar. You can use brown sugar or refined sugar after powdering)
    • 1 tsp baking powder
    • 1/4 tsp baking soda
    • 1 tbsp cocoa powder
    • 1/8 tsp salt
    • 1/2 tsp Cinnamon powder
    • 1/2 tsp ginger powder
    • 1/4 tsp nutmeg powder
    • 1/4 tsp Star Anise powder
    • 1/4 tsp Cloves powder
    • 1 cup milk (at room temperature)
    • 1/2 cup melted butter (at room temperature)
    • Soaked fruits
    • Caramel Solution (at room temperature)

    FOR TOPPING

    • 1/2 cup mixed nuts & dried fruits (it includes same fruits & nuts used in the cake)
