Vegan peanut butter cookies recipe is undoubtedly one of the best cookies recipe we have ever tried and tasted. These cookies were in our wish list since long and finally it came into existence now.
Actually peanuts are available and eaten in norther India during the whole winters. The Indian festival Lohri involves a Puja Parikrama around the bonfire and distribution of Prasad in which peanuts are one of the 6 things.
After Lohri, we still had lot of peanuts at home. The first thing we made with the peanuts where peanut butter and our son used to enjoy the peanut butter sandwich.
Later he wanted to have something made with the peanut butter other than sandwich, so we decided to make this egg free peanut butter cookies recipe.

1. Take a bowl and add peanut butter and sweetener in it. We have used shakkar but you may add any sugar (brown, jaggery, coconut or refined). But sugar has to be in powdered form.
2. Whisk them good so that everything incorporates so well.
3. Add flour, baking soda, baking powder and salt.
4. Mix the material to make it like breadcrumb consistency.
5. Now add milk, very little at a time and start bringing the mixture together. We have used oats milk. You can use any plant based milk of your choice. If you aren’t vegan, you can use dairy milk also.
6. We need to make a dough of slightly soft consistency.
5. Now make small balls out of the dough and keep placing on the baking tray.
7. Press a criss-cross into the top of the balls using the back of a fork. But don’t apply extra force so that the ball breaks down and shatters. For better understanding, please watch the video.
8. Place the cookie tray in refrigerator for about 30 minutes.
8. Bake @170°C for 20 to 25 minutes in the middle rack of the oven with both the rods on.
9. Bring them out and let cookies cool down completely.
Your vegan peanut butter cookies are ready.

NOTES
- Baking time may differ depending from oven to oven.
- As long as the cookies are hot, they will have a soft texture. So don’t get worried. They will gain right texture on cooling down.

- 1 cup Whole wheat flour
- 1 cup Peanut Butter Unsweetened
- 1 cup Shakker (Sugar) You can use any sugar in powdered form
- 1/8 tsp Baking Soda
- 1/2 tsp Baking powder
- 4-6 tbsp Oats milk (more /less) You can use any milk of your choice
- salt a pinch
- Little oil for greasing baking tray
