Crispy okra is an Indian recipe popularly known by the name Kurkuri Bhindi.
“Kurkuri” means “Crispy” and “Bhindi” is the Hindi word for “Okra” aka Lady finger.
In our family, bhindi is a darling and for the said reason, it is made quite often but only the bhindi masala recipe and sometimes Bhindi do pyaza..
Although we love to have Kurkuri Bhindi, but alas this is always rejected being deep fried.
This time, all thanks to Air Fryer due to which we could make and cherish this guilt free Kurkuri Bhindi by using just spoonful of oil instead of deep frying.
HOW TO SERVE KURKURI BHINDI?
This is the beauty of this air fried bhindi that it can be served both as a main course as well as snack/appetizer.
You can pair it with roti, parathas, or enjoy it is with any curry and rice.
If you are intending to serve this okra air fryer Indian as an appetizer, club this air fryer crispy okra with your tomato ketchup or any of your favorite dip.
FROZEN OKRA IN AIR FRYER RECIPE
Making the frozen okra in air fryer oven is no way different than the one you are making kurkuri bhindi in air fryer with the fresh ladyfinger.
You need not to thaw the okra before cooking. Just take out of the freezer, season and air fry.
Though you need to admit the fact that kurkuri bhindi air fryer doesn’t get that much crisp as much is the fresh okra.
PRO TIPS TO MAKE PERFECT BHINDI KURKURI IN AIR FRYER
1. Wash and let okra dry completely before cutting. If you can’t wait for hours to let it dry naturally, then use a dry kitchen towel and start rubbing each okra one by one to pat dry them. Drying okra is very important because wet okra will not turn crisp.
2. Cut the strips thin and prefer to keep them uniform so that they also get cooked uniformly.
3. Water is added only as much as needed so that spices stick to okra so don’t add much water.
4. Do leave okra for some time after marination so that spices stick to okra very well.
5. Do shake the okra when it is cooked halfway. It will help to cook okra uniformly from all sides.
6. If the quantity of okra is too much which cannot be accommodated in air fryer basket in one go, then fry in batches but don’t overcrowd the basket.
WHAT IF I DON’T HAVE AIR FRYER?
CRISPY OKRA AKA KURKURI BHINDI IN OVEN
If you don’t have air fryer, you can bake the okra also but results will not be as good as the air fried one.
Arrange all coated okra on greased baking tray and bake @180°C until it turns crisp.
KURKURI BHINDI ON STOVE TOP
There are two ways to make Kurkuri Bhindi on Stove top in a vessel.
One, shallow frying and other deep frying.
Drop 2-3 spoons of oil in a pan and shallow fry okra from both sides till turn crispy.
Although you can deep fry okra in lots of oil also, but this is least suggested method because all oil will have particles of gram flour, rice flour and other spices and thus spoils it.
STEP WISE PICTORIAL RECIPE OF CRISPY OKRA RECIPE
- Wash okra very well.
- Leave aside so that it dries up completely.
- Cut the stem part of the okra.
- Then cut it lengthwise into thin strips.
- Transfer okra in a bowl.
- Add all the mentioned ingredients.
- Give a good mix and keep aside for 10 minutes so that spices stick to the okra.
- Grease the basket of air fryer with oil.
- Spread all the okra in basket.
- Air fry @170°C/338°F for 10 to 12 minutes.
- Pause the air Fryer midway and just shake the basket.
- Air fry for rest of the minutes.
Crispy okra in air fryer is ready. Enjoy.

Ingredients
- 20 okra around 200 gm
- 2 tbsp gram flour/besan
- 1 tbsp rice flour
- 1 tsp red chili powder/paprika
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp dry mango powder or 1 tsp chaat masala or 1 tbsp lemon juice
- 2 tbsp oil plus few drops for greasing
- 1 tsp water
Instructions
- Wash okra very well.
- Leave aside so that it dries up completely.
- Cut the stem part of the okra.
