Chilli Garlic Noodles recipe with step wise pictorial and video method.

ABOUT THIS RECIPE
Noodles is such a word which has the tendency to mesmerize any person of any age, be its kids, adults or old one.
Made with handful of Ingredients, chilli garlic noodles are anytime snack and it gets ready hurriedly.
Usually people make it by adding many of the Vegetables like carrots and cabbage, but technically, only bell pepper goes into it.
Bell pepper, also called by the name Capsicum belongs to the family of chillies, so addition of Capsicum is ethically allowed.
WHICH NOODLES ARE BEST TO MAKE THIS RECIPE?
Hakka noodles, rice noodles, Maggie noodles, vermicelli noodles, egg noodles, whole wheat thin noodles, all purpose flour noodles or simple chow mein, you can use any noodles of your choice.
DIFFERENCE BETWEEN CHILLI GARLIC NOODLES AND CHOWMIN?
Dry red chillies, Garlic and capsicum are the prime Ingredients of chilli garlic noodles whereas Chow meins don’t call for dry red chillies.
Furthermore, there’s no binding of veggies to be used in chow meins and you can add whatever comes to your hand, ranging from carrots to corns to cabbage to mushrooms to chicken or meat and so on.
So you can call that chow meins are more street style version of the garlic noodles.
EXPERT TIPS
1. Do not over cook the noodles as it will turn sticky. So always follow the package instructions.
Generally it is suggested to cook noodles al dente, which literally means cook so as to be still firm when bitten.
2. This is common practice of running the noodles from cold water immediately after boiling, to stop cooking process. This way noodles loose so much of starch and shine.
Instead of running through cold water, spread noodles on wide tray and apply some oil over them to prevent them from sticking.
3. Always saute the veggies on high heat.
4. Don’t let the crunch of vegetables go by overcooking them.
ADDITIONAL TIP
Don’t discard the water in which noodles are boiled. This starchy thick water can be used in thickening the gravy or soups.
STEP WISE PICTORIAL RECIPE
BOILING OF NOODLES
1.Take water in a wide pan and put on the heat.
2. Add oil and salt.
3. When water begins to boil, add noodles.
4. Let the noodles cook for 2-3 minutes (better to follow instructions given on the pack). Noodles have to be cooked al dente.
5. Once done, take the noodles out of water and spread in some wide tray or plate.
6. Pour some oil all over the noodles and toss so that they don’t stick to each other. As the noodles must be extremely hot, so better use a tong to toss them. Keep aside.
MAKING OF NOODLES
7. Take oil in a wok or pan.
8. Add garlic and dry red chillies.
9. Saute till garlic turns slightly brown.
10. Add onion and saute till the edges of onion runs slightly brown.
11. Then add bell pepper and saute on high heat for a minute or two. Remember, the crunch of onion and bell pepper shouldn’t be lost.
12. Add red chilli sauce, soya sauce, tomato ketchup and vinegar. Saute.
13. Now add spring onion greens and saute them too.
14. Add sugar and saute again.
15. Lastly add noodles and salt.
16. Mix well but be careful not to break the noodles.
17. Garnish with spring onion greens.
18. Spicy chilli garlic noodles are ready.

NOTES
Be vigilant while adding salt. Sauces too have salt especially soya sauce.

Ingredients
FOR BOILING NOODLES
- 200 gram Noodles
- 4 Cups water
- 1/2 tsp salt
- 1 tsp oil
FOR COOKING NOODLES
- 2 tbsp sesame oil
- 2-3 dry red chillies
- 1 tbsp garlic finely chopped
- 1 big onion cut lengthwise
- 3/4 cup bell pepper red/yellow/green
- 1 tbsp red chilli sauce
- 2 tsp soya sauce
- 1 tbsp tomato ketchup
- 1 tbsp vinegar
- Salt to taste
- 1/2 tsp sugar
- 1/4 cup spring onion greens
- 2 tbsp spring onion greens for garnish
Instructions
