Chana Madra | chana madra recipe with step wise pictorial method.
It is a delicious and mouthwatering breakfast recipe from Himachal Pradesh. this is one such dish made with kabuli chane or white chickpeas cooked with the yogurt & seasoned with assorted spices.
There lies a major difference in the cooking process of making madra of chane and other chane recipe followed in rest of the country. The present recipe is in a dry form, having yogurt in it and no chilies at all, which makes it a unique recipe.

Ingredients
- 1 cup Chickpeas/Kabuli Chana/white chane
- 2 tbsp Oil
- 1 Black Cardamom/Moti Elachi
- 3-4 Cloves
- 3/4 tsp Cumin powder
- 1/2 tsp Garam Masala
- Turmeric a pinch
- Salt as per taste
- 1 cup Curd
- 2 tsp Rice flour
- 2 tbsp of water
Instructions
- Wash and soak chana overnight in water with a pinch of salt.
- In the morning, pressure cook the chana till soft.
- Heat oil in a pan and add cardamom, cloves, garam masala, turmeric, cumin & Saute well.
- Then add the boiled channa and let it cook for couple of minutes.
- Take a small bowl, add curd in it and beat the curd first.
- Then add the beaten curd in chane and mix well.
- Now take one more small bowl, mix the rice flour in water and then add to the pan.
- Let it simmer so that the gravy gets thickens.
- Cover the pan with a lid and let chanas cook for about 10 mins.
- Your chana Madra is ready.
- Serve hot with Babru.

NOTE
*Traditionally chana Madra are being made without adding red chilly. If you want to skip a little from the traditional method, a bit, then you can also add red chilly powder while adding other species. However this chilly free recipe is going to be very much appreciated by your children.
*If the yogurt you are using is sour, it will enhance the taste of your recipe for sure.
