Bread Kulfi Recipe without condensed milk with step wise pictorial and video method.
Usually a cheat recipe doesn’t give that appropriate taste which you get from the authentic recipe but this is not applicable to this bread Kulfi.
Mainly kulfi is made with condensed milk or malai or khoya, but keeping all those expensive ingredients aside, if you try it with bread, you will get the same authentic taste.
Actually the purpose of adding breadcrumbs to milk is to reduce the cooking time because due to the breadcrumbs, milk thickens quickly and you need to simmer the milk for less duration.
This is such a hack which works so best that you can’t imagine that the kulfi is made with breadcrumbs.
It is also a helpful hack to use the leftover bread which you are not intending to use otherwise. Instead of bread, you can use the rusk also after crushing.
Adding breadcrumbs doesn’t mean that you need not to simmer the milk but it does mean that simmering time is reduced to more than half.
Also the simmering time depends on you that how creamy you want your kulfi.
Furthermore you can add flavour to this kulfi be it mango, kesar, pista, paan, malai or thandai kulfi.
And above all, if there’s even an iota of doubt in your mind that this kulfi may taste like bread, then rest assured. No one even will be able to guess that it has bread in it.
So just chill, cook and enjoy.
STEP WISE PICTORIAL RECIPE OF BREAD KULFI RECIPE WITHOUT CONDENSED MILK
1. Take 6 bread slices and cut their edges.
2. Roughly tear the slices and put in the blender.
3. Blend to crumbs. keep aside.
4. Pour 1 tbsp water and 1 liter milk in a heavy bottomed pan.
5. Add 10 -15 saffron strands.
6. Let milk come to boil.
7. Add 1/2 cup sugar.
8. Also add 1/4 tsp cardamom powder. Mix.
9. Let sugar dissolves completely.
10. Add breadcrumbs and mix well.
11. Let milk simmer on moderate heat.
12. Milk will become half and turn thick after about 15 minutes of simmering.
13. Add coarsely crushed nuts and mix well. Kulfi base is ready. This is the stage when you taste the kulfi base and if find that less sweet, can add more sugar as per your choice.
14. Switch off the heat and let the kulfi base cool down completely.
15. Pour the kulfi base in kulfi moulds. If you don’t have kulfi moulds, you can use matkas or disposable paper cups or even some small glasses from the kitchen.
16. Wrap the top of kulfi moulds with aluminium foil.
17. After giving a slight cut in the middle of aluminium foil, insert a kulfi stick.
18. Let kulfi freeze for 8-10 hours or overnight.
19. Take out the kulfi mould, just put it in a glass of water for couple of seconds.
20. Rub the mould between your palms.
21. Withdraw the kulfi by holding the stick.
Enjoy after garnishing with pistachios.

- 1/4 tsp cardamom powder
- 1 tbsp water
