Bihari dish Bhabhra recipe | Hare Chane ka Bhabhra with step wise pictorial and video method.

Bhabhra is a famous vegan and gluten-free snack recipe from Bihar and Jharkhand states of India.

Commonly made with green beans or black chickpeas, it is a kind of vegan and gluten-free pancake and traditionally made on day of Holika Dahan, a day before Holi.

We came across this recipe on our Facebook food group Global Indian Foodies posted by a talented home chef Ms. Meena Ojha. She’s preserving culinary traditions by sharing delicious dishes that are at risk of being forgotten in today’s modern food scene and this Bhabhra is one amongst them.

Her efforts are really wonderful and a great way to celebrate cultural heritage by keeping these recipes alive for future generations.

How the Bhabhra is made, on what day it is made traditionally, all were shared by her in her Facebook post.

Though she made it using black chickpeas but has mentioned that green beans can also be used.

Although what we have learnt from Google that it can be made in various ways depending on your personal preferences.

Though the basic ingredient is green beans or black chickpeas, but people do add lots of finely chopped vegetables as well, which may include onion, potatoes, carrot, green beans and many more.

These veggies go into the batter and makes a mouthwatering Bhabhra.

In addition to that, we would like to bring you concentration towards the fact that in place of rice flour, you may also use soaked and grinded rice as well.

This Bhabhra is served with green chutney or tomato ketchup or any dip of your choice.

STEP WISE PICTORIAL RECIPE OF BIHARI DISH BHABHRA RECIPE

 

Take a bowl and add gram flour and rice flour. The quantity of both of flours along with the quantity of other ingredients is given in the recipe card at the end of this post.

Then add turmeric powder, coriander powder, cumin seeds, black pepper powder, red chili powder, asafoetida/hing, carom seeds/ajwain, green chilies, ginger paste and salt.

NOTE : You can add finely chopped seasonal vegetables and onion as well.

Give them a good mix.

Now start adding water but little at a time.

You need to make a thick battle out of it.

Then add green beans/hare chane and coriander leaves. Mix well.

NOTE : In winters, it is generally made with green beans and in summers, mostly with overnight soaked black chickpeas/kala chana.

Spread few drops of oil on non stick tawa or pan.

NOTE : Traditionally it is made in mustard oil but you can make it in any oil of your routine cooking. Also it can be deep fried as well in the shape of pakodas.

Drop 1-2 ladle full of batter on hot tawa and spread. It is just a pancake size and not to much bigger.

Let it cook from one side on low heat.

When the batter slightly firms on tawa, flip it. Drop some oil on the edges as well and let cook this side too.

After it turns brown from both sides, take off the tawa.

Serve hot with chutney or any dip of your choice.

Ingredients
  

  • 200 gram Hare chane/Green gram (washed & drained)
  • 1 cup gram flour/besan
  • 2 tbsp rice flour
  • 1 tbsp turmeric powder
  • 1 tbsp coriander powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp black pepper powder
  • Red chili powder to taste
  • Pinch of asafoetida/hing
  • 1/2 tsp carom seeds/ajwain
  • 2 green chilies
  • 1 tsp ginger paste
  • 1 tbsp chopped coriander leaves
  • Salt to taste
  • oil for shallow frying as needed
  • Water as required
