Baked Mathri Recipe – Air Fryer and Oven methods with step wise pictorial and video method.

Mathri, which is commonly called by the name Mathi is a popular Indian snack that is typically made from flour, water and a few spices.

The dough is turned into thin discs which are then deep-fried until they become crispy and golden brown.

Mathri can have various textures ranging from crispy to slightly flaky, depending on the recipe and method of preparation. It is often enjoyed with tea or as a snack on its own.

INGREDIENTS USED IN MAKING BAKED MATHRI RECIPE

FLOUR : Flour is the basic ingredient for making mathri. What we have used here is our choice but generally it is made with all purpose flour.

You can make the addition of semolina as well.

The ratio of the flours also can be set as per your liking.

SPICES : This recipes uses all the basic spices much needed to make mathri. From asafoetida to cumin, black pepper, carom seeds, red chilli powder and salt, all makes the mathri complete.

However one ingredient that takes the taste of mathri to another level is dry Fenugreek leaves. It’s more about aroma than taste. So try not to skip it.

VINEGAR: The addition of vinegar will make the mathri crispy. Instead of this, you can add 1 tsp of baking powder or 1/2 tsp of baking soda.

FAT : Generally desi ghee is added to make mathri and earlier also, we have made this with desi ghee. Call them mathri or cookies, but we have earlier used ghee residue in similar kind of recipe.

This time we wanted to try the vegan version and that too with mustard oil.

Earlier we were confused about the use of mustard oil because it has a strong and pungent aroma but later though of giving it a try.

We have smoked the oil first to get the neutral flavour and believe this, mathri came out too awesome.

COOKING METHOD: Traditionally mathri is deep fried but we have baked it in airfryer and oven. And believe this, it is the most delicious mathri we have ever have.

But in case you don’t have an Air fryer and OTG, it can be baked in microwave in convection mode.

STEP WISE PICTORIAL RECIPE OF BAKED MATHRI RECIPE – AIR FRYER AND OVEN METHODS

 

Take a bowl and add whole wheat flour, gram flour and rice flour. Quantity of all the flours and other ingredients is given in the recipe card below.

Add hing/asafoetida, dry Fenugreek leaves /kasuri methi, cumin seeds, carom seeds , black pepper powder, red chilli powder, vinegar and Salt.

Mix well.

Now add cooked mustard oil.

Mix with some spatula or whisker.

Start adding water and begin to knead a dough.

The consistency of the dough should be tight.

Rest it for 30 minutes.

Now take a big loaf of dough and roll it on a clean surface. It should neither be too thick nor too thin.

Using a cookie cutter, cut the dough into roundels.

Slightly pierce them using a fork. It will prevent them from fluffing up while baking.

For air frying, put them in air fryer basket.

Air fry for 8-10 minutes or until crisp.

For baking, arrange them on a baking tray.

Bake in preheated oven @180°C for 20-25 minutes or until crisp.

They turn crisp when cool completely.

Ingredients
  

  • 1 cup whole wheat flour
  • 1/2 cup besan/gram flour
  • 1/2 cup rice flour
  • 1/4 tsp hing/asafoetida
  • 1 tbsp dry Fenugreek leaves /kasuri methi
  • 1 tsp cumin seeds
  • 1 tsp carom seeds
  • 1/2 tsp black pepper powder
  • 1/2 tsp red chilli powder
  • 1 tsp vinegar
  • Salt to taste
  • 1/4 cup cooked mustard oil
  • Chilled water as required

Instructions

    Hi what can i substitute for rice flour? I avoid rice n starches …

      Hi..
      You can use all purpose flour as well. However you are not bound to use all three flours here. Go for one, two or three. Thanks
