Ajwain Atta cookies | Ajwain cookies recipe with step wise pictorial and video method.

Very simple and basic cookies to be enjoyed as a tea time snack is made with ajwain/carom seeds, whole wheat flour, butter and jaggery powder.

The ingredients used in this recipe are so healthy that you can give these cookies to your toddlers also.

AJWAIN & ITS HEALTH BENEFITS

 

Ajwain, which is called by the name carom seeds in English, Ugragandha in Sanskrit, Aijavain in Punjabi, Omam in Tamil, Jowan in Bengali and Yavano in Gujarati is a herb plant originated in India.

Varying from brown to olive green in colour, these seeds have a bitter and pungent flavour and most commonly used seed in Indian cooking.

Either it be abdominal discomfort like burning sensation, acidity or stomach pain, carom seeds are the one which are prioritized in home remedies over the medicines.

For ear or tooth ache, cleansing skin, cough and congestion relief, lower blood pressure or infection prevention, ajwain has an important role to play everywhere.

So it would not be wrong to call it a super seed and if something is so magical, you have every reason to use it in your daily cooking.

And that is why these carom seed cookies are here, which are commonly sold in every bakery across India.

INGREDIENTS USED IN AJWAIN BISCUITS

 

FLOUR : As this recipe is full of health benefits and even recommended for toddlers also, so there was no question of adding all purpose flour/maida to it. Hence these are made with whole wheat flour.

BUTTER : Butter provides a fat content to the cookies. You can replace butter with desi ghee but don’t try with oil.

SWEETENER : Again keeping in view the healthy options, jaggery powder is added instead of sugar.

CAROM SEEDS : This is the star ingredient of the recipe. Some is added into the dough and few seeds are sprinkled over of top of cookies before baking.

BAKING SODA/POWDER : They help in making the cookies crispy and crunchy.

SALT : Ajwain cookies are a combo of mildly sweet and salty, so bit of salt is needed. We have used rock salt in the recipe.

STEP WISE PICTORIAL RECIPE OF AJWAIN ATTA COOKIES

 

  1. In a bowl add butter and sugar.
  2. Cream them using the electric beater. You can do this process with hand beater too but that will be time taking.
  3. Add flour, baking powder, baking soda, salt and 1 tsp carom seeds.
  4. Now start mixing the ingredients and bring them together.
  5. A dough is ready.
  6. Take a lemon size dough and roll it between your palm and slightly flatten it.
  7. Arrange all on a baking tray lined with greased butter paper or parchment paper.
  8. Sprinkle bit of carom seeds all over the cookies and gently press them.
  9. Place the tray in refrigerator for 30 minutes.
  10. Bake in a pre-heated oven @180°C for 20-25 minutes in the middle rack with both the rods on.
  11. Bring the tray out and let cookies cool down completely.

Ajwain cookies are ready.

NOTES

If dough is finding difficulty in binding, add a bit of milk.

1 cup = 200 ml

  • 1 cup whole wheat flour (134 gram)
  • 1/2 cup butter (100 gm)
  • 3 tbsp sugar of your choice (we have used Jaggery powder)
  • 1 tsp plus little extra carom seeds/ajwain
  • 1/2 tsp Baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Instructions
