Air Fryer Veg Manchurian – Gravy with step wise pictorial and video method.

Veg Manchurian is an Indian Chinese Vegan appetizer made of small deep fried balls prepared from mixed veggies primarily cabbage, carrots, capsicum and green beans dunked in hot and spicy thick gravy made of Chinese sauces.

We have taken a slight turn from the traditional method and fried Manchurian balls in Airfryer instead of oil.

Basically there are two versions of Veg Manchurian. One dry and another gravy.

There’s not a much difference between the both except one has a gravy and the other one is dry.

In the gravy Manchurian, veg balls are put in water based gravy + some sauces and on the other hand, in dry Manchurian, veg balls are just coated in sauces with no water. That’s it.

Here we have presented the recipe of gravy Manchurian as the recipe of dry Manchurian has already been shared.

This gravy Manchurian is served with fried rice or noodles. However you can serve it with bread too.

Veg Manchurian and fried rice is one of the most loved and common Chinese food after noodles.

Though many find making Manchurian very tiring job whereas the fact is that it is extremely easy to make it. Yes, we do admit that chopping vegetables need efforts but all the labour is worth if you compare that to the taste of this delicious recipe.

You will find Manchurian almost in every restaurant, hotel, weddings and even in small parties. This is the popularity and love of we Indians for Manchurian.

STEP WISE PICTORIAL RECIPE OF AIRFRYER VEG MANCHURIAN – GRAVY

 

MAKING OF MANCHURIAN BALLS

 

1.Take a bowl and add carrots, capsicum, spring onion greens, cabbage, french beans and onion.

2. Also add red chilli sauce, black pepper powder, corn flour, all purpose flour and salt.

3. Mix them very well and make small balls with the greased hands. No need to add water as the moisture from vegetables is enough to bind the balls. If the mixture is too wet, add more maida.

4. Put all the balls in a greased Airfryer basket. (Alternatively, you can deep fry these balls if don’t have airfryer.)

5. Brush them with oil.

6. Airfry @180°C for 10 minutes or until balls turn brown and crispy. 

MAKING OF CORN FLOUR/CORN STARCH PASTE

 

7. Take a small bowl and add corn flour and water.

8. Mix them well to no lumps. Keep aside.

MAKING OF GRAVY

 

9. Add oil in a wok/pan and add ginger garlic, green chilies and scallions.

10. Saute till ginger garlic turns brown.

11. Add soy sauce, tomato ketchup, red chilli sauce and vinegar. Cook for 30 seconds.

12. Add water and let it come to boil.

13. Then add corn flour paste after mixing it again.

14. Add black pepper powder, salt and sugar. Don’t put much salt because soya sauce, tomato ketchup and Manchurian balls are already having salt in them.

15. Boil water for 2-3 minutes or until the gravy has a glaze.

16. Put the Manchurian balls into the gravy and cook for a minute.

Lastly garnish with some spring onion greens & enjoy.

NOTES

1. Use any oil you use in regular cooking if don’t have sesame oil.

2. Use the vegetables of your choice or as per their availability.

3. In place of red chilli paste, green chilli paste can also be used.

Ingredients
  

FOR MANCHURIAN BALLS

  • 1/4 cup carrot (grated)
  • 1/4 cup capsicum (finely chopped)
  • 1/2 cup cabbage (finely chopped)
  • 1/4 cup spring onion greens (finely chopped)
  • 1/4 cup french beans (finely chopped)
  • 2 tbsp onion (finely chopped)
  • 3 tbsp corn flour (called corn meal outside India)
  • 3 tbsp all purpose flour/Maida
  • 1/2 tsp black pepper powder
  • 1/2 tsp Salt
  • 1 tsp red chilli sauce (spicy, not sweet)
  • Oil for brushing balls

FOR CORNFLOUR/CORN STARCH PASTE

  • 1 tbsp corn flour/corn starch
  • 2 tbsp water

FOR GRAVY

  • 1.5 tbsp sesame oil
  • 4 tbsp spring onion bulbs/scallions
  • 1 tbsp ginger garlic (crushed)
  • 2 green chilies
  • 1 tsp soya sauce
  • 1 tbsp tomato ketchup
  • 2 tbsp red chilli sauce (spicy, not sweet)
  • 1 tsp vinegar (plain, rice or apple cider)
  • 1/2 tsp black pepper powder
  • Salt to taste
  • 1/4 tsp sugar
  • 1.50 cup water
  • Few spring onion greens for garnish
