Soft, creamy and melt in mouth Koftas made of coconut drunken in flavourful gravy stands out in the class of all type of koftas.
Coconut is a staple food in South India and is used in almost every second dish but for us, the North Indians, there’s hardly any use of coconut in routine.
So we buy the coconut very rarely when there’s something planned to make out of it, mostly chutney or something Sweet.
But there are occasions when the coconut is bought for Pooja (worship), especially on Navratri, Diwali or any kind of prayers and after the occasion is over, coconut is left as a part of prasad. Instead of eating the whole coconut as it is, people usually look for making something out of it which usually end up in chutney or some dessert, as already mentioned.
Besides chutney, there’s hardly any savoury dish where we use the fresh coconut because we are not much exposed to coconut cooking.
But this time, we have come up with such a delectable dish which is not chutney, not anything sweet but something so different , unique and delicious at the same time.
Though the list of ingredients may look exhaustive but each ingredient is so basic, simple and always at Indian kitchens. And the process too is very simple which involves 3 different step :
1. Making of koftas
2. Making of paste and
3. Making of gravy.
Also, we have made this recipe quite light with the use of air fryer which means minimal oil.
But not everyone has the Air Fryer so you can go for deep frying as well.
If want to use least oil but don’t have an Air Fryer, then Appe Pan is also a great idea.
The another best part of the recipe is that it gives you two recipes together. The koftas we have made can be eaten as a snack as well. So if you are not interested in making a curry, then skip everything and just make koftas in any shape you like, adjust a little of more seasoning and enjoy a tea time snack with your favourite dip.
STEP WISE PICTORIAL RECIPE OF AIR FRYER COCONUT KOFTA CURRY RECIPE
MAKING OF KOFTAS
Break open the coconut, collect it’s water, remove from the shell, wash, cut into pieces and add to the grinder jar. Also add ginger and green chilli.
Grind smooth. If you find any difficulty in grinding, add a bit of water, preferably that collected coconut water.
Take the grinded coconut out and also add boiled potatoes, red chilli powder, coriander powder, dry mango powder, roasted cumin powder and coriander leaves.
By mashing the potatoes, give it a good mix.
As this mixture is much moist, add rice flour. Instead you can use roasted besan.
Mix everything and turn into a dough.
With the greased hands, start making balls (koftas). Roll these koftas in rice flour for proper finishing.
You can deep fry them or use appe pan as well. We are air frying them and for that put them in greased air fryer basket and apply oil on them.
Air fry @180° C for 15 minutes or until kofta turn brown. Koftas are ready. It is something you can serve with tea and some dip of your choice as a snack.
FOR MAKING PASTE
Add onions, tomatoes, ginger, garlic cloves, green chilies, green cardamoms, black cardamom, cinnamon, star anise, nutmeg, cloves, pumpkin seeds and water in a pan. We have also added that reserved water from coconut.
Put a lid and boil 15 minutes. Switch off the heat and let it cool down completely. Remove bay leaf, cinnamon stick and star anise.
Add the boiled mixture in grinder jar. Grind to a smooth puree.
MAKING OF GRAVY/CURRY
Heat oil and add cumin seeds. Let them crackle.
Add the puree, salt, red chilli powder, turmeric powder and coriander powder. Also add that cinnamon stick, star anise and bay leaf removed earlier. Mix, put a lid and let it cook on low heat.
Cook till oil is seeing separating from the paste. Add water, sugar and garam masala.
Boil till the gravy thickens a bit.
FOR SERVING
Arrange koftas in a serving tray and drop the gravy over the top.
Garnish with chilli oil and coriander leaf.
Serve hot with roti, paratha or naan.

Ingredients
1 cup = 250 ml
FOR KOFTAS
- 1 fresh coconut
- 2 boiled potatoes
- Small piece of ginger
- 1 green chilli
- 1/2 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp dry mango powder
- 1/2 tsp roasted cumin powder
- 4 tbsp rice flour (or roasted gram flour)
- 2 tbsp coriander leaves
- Oil for air frying/deep frying
FOR PASTE
- 3 onion
- 3 tomatoes
- 1 inch piece of ginger
- 3-4 garlic cloves
- 2 green chilies
- 2 green cardamoms
- 1 black cardamom
- Small piece of cinnamon
- 1 star anise
- Small piece of nutmeg
- 3 cloves
- 2-3 tbsp pumpkin seeds or cashews/melon seeds
- 1.5 cup water
FOR GRAVY
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp Kashmiri Red chilli powder
- 1/4 tsp turmeric powder
- 1 tsp garam masala
- Salt to taste
- 1 tsp sugar
- 1 to 1.25 cup water
FOR SERVING
- Koftas
- Gravy
- Chilli Oil
- Corinder leaves
Instructions
