Vegan and Gluten free 

The first bite be like – Crispy rice paper, gooey dates, crunchy nuts, mild chocolate flavor and you are like OMG.

This recipe is nothing less than a blast of flavours in your mouth and the best thing about the recipe is that it has no artificial sweetener. All the sweetness coming from dates making it a healthy and guilt free dessert.

It is an unparallel amalgamation of Indian traditional Khajoor rolls with the Vietnamese Rice Papers and hence making it a unique dessert in itself.

We have shaped them into rolls because this is the most convenient shape when it comes to wrapping in rice papers otherwise you can shape them round as well and will be called by the names like Khajoor aur dry fruit ke laddu or Khajoor roll mithai.

However these rolls can also be named as Dates and nuts energy rolls or bars even.

FAQ’S

CAN I ADD SUGAR TO DATES ROLLS?

 

Yes, you can but there’s no need of it. The sweetness coming from dates is enough to make it sweet. But in case you like the sweetness on higher side, then you can add sugar, jaggery or mishri as well.

WHICH DRY FRUITS AND SEEDS CAN GO IN DATES ROLLS?

 

There’s no hard and fast rule as to which nuts and seeds can go in. You can use Almonds, Cashes, Pistachios, Walnuts, Raisins, Figs, Dried apricots and from the variety of seeds, feel free to go for pumpkin seeds, Sunflower seeds, Chia seeds, Flax seeds, Melon seeds and Sesame seeds (white or black). We have used many from the said catagories but can simply add, omit or swap anything.
You can adjust the mix depending on availability or your taste — it’s a very flexible recipe.

CAN I MAKE IT NO COOK RECIPE?

 

Of course you can. But roasting of nuts and seeds enhance the flavor and crunch of the dessert. 
But still in case you are opting for no cook recipe, then prefer not to add oats because uncooked oats may cause bloating.

CAN I MAKE THEM WITHOUT RICE PAPERS?

 

Most definitely and this recipe is supposed to be like this only. We have deliberately brought the angle of rice papers to give it a unique and extra crunchy twist.

FOR HOW LONG THESE CAN BE STORED?

 

Once completely cool, put them in air tight container lined with butter paper and they remain good to eat for 3-4 days at room temperature during cool weather.

They can be refrigerated for 2–3 weeks and up to 2 months in freezer. Just wrap each roll individually in cling film or parchment paper, then store in a ziplock or freezer-safe container. For eating, take out and thaw for 30–40 minutes before eating.

STEP WISE PICTORIAL RECIPE OF RICE PAPER DATES ROLLS RECIPE 

 

Add almonds, cashews, walnuts and pistachios in a grinder jar. Only give just 1 pulse. Do not powder them, just break into pieces. You can simply chop them as well. Keep aside.

In the same jar, add deseeded dates, cocoa powder, salt and water. Grind to a paste of desired consistency. We kept it little chunky, you can smoothen it completely.

Add coconut oil in a pan and add dates paste. Cook on low heat for 2 minutes.

Then add oats, pumpkin seeds, melon seeds, white sesame seeds and grinded nuts.

Cook on low heat for 3-4 minutes. Remove the pan from the heat and let it cool down as much as you can touch it.

Shape them into rolls of desired size. We made 7 out of entire mixture. You can enjoy these rolls as it is.

But to give it a twist, soak rice paper in water for 12-15 seconds. Wrap a dates roll in it.

Arrange the rolls in the greased air fryer basket and brush coconut oil on them.

Air fry @180°C for 12-15 minutes by turning their sides and applying oil on other side too.

Enjoy when slightly or cool.

NOTES

  1. If you feel your dates are hard to grind, then you can soak them in hot water for 15 minutes to soften them.
  2. To make many an alteration in the flavours, you can completely omit cocoa powder or replace it with cardamon and cinnamon powder.
  3. Making it vegan so used coconut oil. Vegetarians can go for desi ghee as well.
  4. If don’t have Air Fryer, no issues. Just gently toast them in a pan using very little oil.
