Add almonds, cashews, walnuts and pistachios in a grinder jar.
Only give just 1 pulse. Do not powder them, just break into pieces. You can simply chop them as well. Keep aside.
In the same jar, add deseeded dates, cocoa powder, salt and water.
Grind to a paste of desired consistency. We kept it little chunky, you can smoothen it completely.
Add coconut oil in a pan and add dates paste. Cook on low heat for 2 minutes.
Then add oats, pumpkin seeds, melon seeds, white sesame seeds and grinded nuts.
Cook on low heat for 3-4 minutes.
Remove the pan from the heat and let it cool down as much as you can touch it.
Shape them into rolls of desired size. We made 7 out of entire mixture. You can enjoy these rolls as it is.
But to give it a twist, soak rice paper in water for 12-15 seconds.
Wrap a dates roll in it.
Arrange the rolls in the greased air fryer basket and brush coconut oil on them.
Air fry @180°C for 12-15 minutes by turning their sides and applying oil on other side too.
Enjoy when slightly or cool.
