Eggless Sattu Cookies Recipe with step wise pictorial and video method.

Sattu is a popular super food in india which is basically a ground grain typically chana (chickpea) and also includes barley or maize or even a mixed product of all these.
Today this protein and fiber rich food is the star ingredient of our recipe and we have used barley sattu. Barley is called by the name Jau in hindi and is full of health benefits.
Generally sattu is used in drinks during summers because of its cooling effects. It keeps the body internally cool, aids digestion, prevents heat stroke and keep the level of energy stable.
Earlier we have made sattu premix & sharbat using chana sattu but this time we are making cookies out of other sattu made from barley.
Though you are not bound to use only barely sattu but can use other sattu as well, but be careful while adding liquid content because texture of every sattu is different so is the absorbing capacity.
Making cookies using sattu was a new idea so we we’re sure about the results as it was a trial. But luckily they came out so good. The sugar was mild and cookies were softly crisp. The colour of our cookies were deep because of brown sugar but in case you are using regular white sugar, they will be not this much deep in colour.
STEPWISE PICTORIAL RECIPE OF EGGLESS SATTU COOKIES RECIPE
Add butter and sugar in a bowl.
Whisk it until creamy using electric beater. If you don’t have electric beater, you can simply use hand whisk.
Add sattu, cardamom powder and baking soda.
Mix them so well. Now start turning them into a dough.
If you feel mixture is slightly dry and not binding properly, add a tbsp of milk.
Make a dough out of the mixture.
Make small balls out of entire mixture and arrange on a baking tray lined with greased butter paper of silicon mat.
Flatten the balls slightly using fork.
Place the tray in refrigerator for 30 minutes.
Transfer the tray in preheated oven and bake @170°C for 18-20 minutes or until the edges of cookies begin to turn brown.
Take the tray out and let the cookies cook down completely.
Enjoy.
NOTES
- You can use any of the sattu to make these cookies.
- We have used brown sugar which has a very sandy texture so required no powdering. But if you are using regular granulated sugar, power of first.
- For making the cookies more rich, you can use desi ghee Instead of butter.

Eggless Sattu Cookies Recipe
Ingredients
1 cup = 250 ml
- 1 cup sattu (100 grams/ used barley/Jau sattu)
- 1/3 cup powdered sugar of your choice (70 gram/used brown sugar)
- 1/3 cup butter (80 gram at room temperature)
- 1/2 tsp cardamom powder
- 1/4 tsp baking soda
- 1 or 2 tbsp milk (only if needed)
Instructions
