Though there are any, but when it comes to the most comfort Indian food, Moong dal tadka is the one whose name flashes in the mind at the very first place.

A very basic simple dal when comes in touch with Indian spices, the taste of dal gets elevated to a different level.

This tasty vegan recipe which is also gluten free is sure to keep up with your healthy lifestyle.

In Indian households, this dal is generally made on routine basis and especially when something is not carrying a good health and doctors have suggested something light to eat. This nutrient rich dal is very gentle on stomach and gets digested so easily and quickly.

But do note that if you are making it during ill health, do not use too much of spices as shown in this post. Just basic spices and that’s it.

This dish is inspired by the rustic charm of roadside dhabas & offers an unmatched depth of flavor and taste.

One thing important to share is that we have made them without pressure cooker. In India, dals are generally cooked in pressure cooker only to save time but we have made it in pan for a reason.

Actually moong dal cooks very quickly and when you make it in pressure cooker, it doesn’t retain that fluffy and grainy texture. Instead dal turns thin and individual lentils tend to disappear.

But in pan, you have complete control when to take it off the heat.

So pan method is a method which allows the dal to cook slowly, retain the shape and produce more flavours & absorb the spices properly producing an earthly flavour.

It is an easy to make dal & is cooked to perfection. This dal is a creamy perfection & is engulfed with vibrant tadkas, beautiful spices & is made using oil as we are intending to keep it vegan.

But in case you are not vegan then desi ghee can be used in place of oil and the taste of the daal will shoot like anything.

This recipe is all about blast of flavours. The aroma of garlic, spice from fresh chillies and aroma of all the masalas elevate this dish to another level.

This recipe is special not only because of it’s uniqueness but it’s versatility. This recipe is adaptable & can also go with any combination. It pairs beautifully with steamed rice, jeera rice, or even Indian breads like roti,  paratha or naan, making this dish a hearty & wholesome meal.

Moong Dal Tadka Recipe without pressure cooker

STEP WISE PICTORIAL RECIPE OF MOONG DAL TADKA RECIPE WITHOUT PRESSURE COOKER :

 

BOILING OF MOONG DAL

Take moong dal in a bowl. Wash and soak it for 15-20 minutes.

After the said period, drain the water and add dal in a deep and wide pan. Also add water, turmeric, salt and oil.

Keep the heat high till water comes to boil. You will find a fomey substance floating over the water. Remove and discard this scum.

Put a lid on the pan and bring the heat low to medium.

Let the dal boil for 20 minutes. You can check the doneness of dal by pressing a piece of lentil. Remove the pan from the heat then and keep aside.

FOR FIRST TEMPERING/TADKA

Take oil in a pan and add ginger, green chilies and onion in it. Cook until onion turns slightly brown.

Add tomatoes, asafoetida, turmeric powder, coriander powder and salt. Mix well.

Cook over on low heat until oil separates.

Now either pour the boiled dal in a pan carrying tadka or vice versa.

Add coriander leaves and mix well.

MAKING OF SECOND TADKA

Take a small tadka pan and add oil, cumin seeds and garlic. When the garlic turns brown, add dry red chilli, kasuri methi and kashmiri red chilli powder.

Mix and immediately transfer to the dal.

Mix well.

Serve hot after garnishing with coriander leaves.

Ingredients
  

1 cup = 250 gram

    FOR BOILING MOONG DAL

    • 1 cup yellow moong dal (skinned moong lentils)
    • 3.5 cups water
    • 1/2 tsp salt
    • 1/2 tsp turmeric powder
    • 1 tsp oil

    FOR MAKING FIRST TEMPERING

    • 2 tbsp oil
    • 1 tbsp ginger (grated)
    • 1 big onion (finely chopped)
    • 2 green chilies (finely chopped)
    • 2 medium Tomatoes (finely chopped)
    • 1/8 tsp asafoetida/hing
    • 1 tbsp coriander powder
    • 1/4 tsp turmeric powder
    • Salt to taste

    FOR TADKA/TEMPERING

    • 1 tbsp oil
    • 1 tsp cumin seeds
    • 4-5 garlic cloves (thinly chopped)
    • 1 dry red chilli
    • 1 tsp kasuri methi
    • 1 tbsp kashmiri red chilli powder

    Instructions

    • Take moong dal in a bowl.
