This is indeed a simplest of all cakes and unfortunately very uncommon cake recipe. You will hardly find people making it but believe us, once you try it, you are gonna fall in love with it.

In the category of tea time cakes, this is one of the cake bread which our entire family loved to the core. And if you go by the list of ingredients, that is going to amaze you more for its simplicity. Here it goes :

FLOUR : To make this recipe a healthy treat for each one, we have only used whole wheat flour and said no to all purpose flour i.e. maida. However it is always a personal choice to pick one amongst the two.

FENNEL:  Fennel, which is called Sounf in Hindi and it is something very commonly used in Indian kitchens, especially for adding unique flavour and aroma to food, be it curries, rice dishes, sweet dishes and snacks. It adds a slightly sweet, licorice-like flavor.

It comes in a seeds form and powder as well. In the present recipe, we have added both types of fennel.

CURD : As this cake recipe is eggless, so curd is the best substitute of eggs in cakes. Here, the curd should be fresh, not sore and must be at room temperature.

MILK :Milk should also be at room temperature and prefer to go for full fat one.

MILK POWDER: Milk powder will add the richness in the cake so not to skip it.

SUGAR : sweetness to the cake is being provided through the sugar. Here too, you have multiple choices. We have used Khandsari sugar but you can opt for regular sugar, brown sugar, crushed jaggery or jaggery powder as well.

OIL : Use any oil which is unflavoured and without aroma. In place of oil, feel free to use butter or desi ghee.

BAKING POWDER/SODA : These are the Leavening agents help in making the cake soft and fluffy.

STEP WISE PICTORIAL RECIPE OF EGGLESS FENNEL SEEDS CAKE RECIPE

 

Take a bowl and add curd and baking soda. The quantity of all the ingredients is given in the recipe card below.

Mix and rest for 5 minutes.

Thereafter add sugar, oil and milk.Mix well.

 Put a sieve on the bowl. Add flour, milk powder, baking powder and fennel seeds powder.

Sift the ingredients into a bowl. Add fennel seeds.

Mix without leaving lumps behind.

Pour the batter in a greased cake tin/mould and sprinkle fennel seeds over them.

Bake in a preheated oven @180°C for 35-40 minutes.

Once done, take the cake out and check by inserting a toothpick. If it comes out clean, its a sign that cake is properly baked. Let cake cool down for 10-15 mins.

Thereafter bring the cake out of mould and let it cool down completely on a wire rack. Slice and enjoy your eggless Fennel seeds cake.

NOTES

1. Instead of whole wheat flour, you can use all purpose flour or both in the ratio of 50:50.

2. For more intense flavours, you can enhance the quantity of fennel seeds or powder.

Ingredients
  

1 cup = 250 ml

  • 1 cup Whole wheat flour (139 grams)
  • 1/4 cup milk powder (30 gram)
  • 1/2 cup curd/yoghurt (144 gram)
  • 1/2 cup milk (125 ml)
  • 1/4 cup oil (60 ml)
  • 3/4 cup sugar of your choice (we used khandsari sugar - 143 gram)
  • 1 tbsp powdered fennel seeds
  • 1 tbsp fennel seeds
  • 1 tsp fennel seeds for sprinkling
  • 1 tsp baking powder
  • 1/2 tsp baking soda
