WHAT IS AU GRATIN?
The phrase “au gratin” or “gratinee” derives from the French word which refers to the cooking process involves topping a dish with grated cheese or breadcrumbs or the mixture of both and baking or grilling until crisp.
WHAT IS VEG AU GRATIN?
In this French origin dish Veg Au Gratin, these are the vegetables which are used as the base of the dish.
Par boiled vegetables engulfed with white saute and topped with cheese is when baked to brown crusty top, makes a veg Au Gratin.
VEG AU GRATIN PRONOUNCIATION?
Americans pronounce Au Gratin as oh (or aw) GRAH-tin; whereas the French say oh-grah-TAHN.
WHAT VEGETABLES CAN BE USED TO MAKE VEG AU GRATIN?
There’s no hard and fast rule as to what vegetables can go in Au Gratin. It is totally at your choice of vegetables plus their availability.
Carrots, potatoes, peas, french beans, mushrooms, broccoli, cauliflower, sweet Corns, bell pepper and blah blah blah… this list can go on.
Instead of mixed veggies, you can use any particular single vegetable to make the base of the dish.
However you can make a non veg au Gratin as well.
WHICH CHEESE CAN BE USED FOR AU GRATIN?
We are making the vegan au Gratin so used vegan Mozzarella.
But if you are not stick to veganism, you can go for any dairy cheese like Mozzarella, Gouda, Gruyere, Swiss, Fontina, Havarti, Cheddar and even processed for Au Gratin.
INGREDIENTS TO MAKE VEGAN VEG AU GRATIN
VEGETABLES: we have used potatoes, green peas, carrots, beans, cauliflower and sweet Corns. However you can use any vegetables of you choice.
WHITE SAUCE: white sauce is made using vegan butter, milk, garlic, powdered oats and Italian seasoning.
If you are not vegan, then feel free to use dairy butter and milk.
Oats powder makes a good white sauce because we have already tried it in making “White sauce pasta without maida“. But in case you don’t have oats powder, you can use wheat flour or all purpose flour as well.
TOPPING : Topping is done with vegan shredded Mozzarella along with Italian and and red chilli flakes.
CAN AU GRATIN BE AIR FRIED?
Yes ofcourse. In this recipe we have airfried the Au Gratin made in ramekin bowls and the aur gratin in glass dish is baked in oven.
CAN AU GRATIN BE GRILLED?
In place of choosing the baking option, you can grill the Au Gratin as well.
CAN AU GRATIN BE MADE WITHOUT OVEN?
Yes, if you don’t have oven, you still can enjoy this French delicacy made on stove top. The process is very much similar to baking a cake on stove top.
It is to be noted that you will not get that brown crusty top as happens in oven but still melted cheese top can satisfy your taste buds.
HOW TO SERVE VEG AU GRATIN?
No hard and fast rule as how to serve this appetizing dish. You can serve it as a main course or as a side bread toasts. We love to have it with plain garlic bread.
STEP WISE PICTORIAL RECIPE OF VEGAN GRATIN RECIPE
1.Take ample of water in a deep pan and add 1 tsp of salt in it.
2. Let water come to boil.
3. Add 1 cup potatoes (small diced), 1 cup green peas, 1 cup Carrots (small diced), 1 cup beans (thinly chopped) and 2 cup cauliflower (small florets).
4. Let the vegetables boil for 10 minutes.
5. Drain the vegetables. The leftover water is a vegetable stock which can be used in some recipe.
6. Transfer the vegetables in a bowl.
7. Add 1/2 cup of sweet Corns in the boiled vegetables and keep aside.
MAKING OF WHITE SAUCE
8. Add 100 grams butter in a pan.
9. When butter melts, add 1 tbsp of chopped garlic into the butter.
10. When garlic begins to turn slightly brown, add 1 tsp red chilli flakes, 1 tsp mix herbs and salt according to your taste and mix well.
11. Add 2 tbsp of powdered oats.
12. Saute on low heat for a minute so that oats flour roasted well.
13. Add 2 cups of milk.
14. Let milk simmer on low heat. Keep stirring. If you like, you can add some cheese as well, though we didn’t.
16. When the sauce turns thick, switch off the heat. To check, put a spoon in the sauce and draws a line on the back side of the spoon. If a clear line draws, it means sauce is properly cooked.
17. Pour the white sauce over the vegetables.
18. Give them a good mix.
19. Put some mixture in oven safe glass tray. For individual sharing, you can use the ramekin bowls also. If don’t have both glass tray or ramekin bowls, then you can even use cake tin also.
20. Put the shredded mozzarella cheese over the vegetables base.
21. Sprinkle some mix herbs and red chilli flakes over the top.
22. We have baked the glass tray in a pre-heated oven @200°C for 10 minutes or until golden crusty top is achieved.
23. And put the Ramekin bowls in Airfryer and airfried @180°C for 10 minutes.
Veg Au Gratin is ready. Serve hot, preferably with toasted bread.

- Red chilli flakes for sprinkling
- Mix herbs for sprinkling
Instructions
