Vegan Wool Roll Bread Recipe | Savory wool bread with step wise pictorial and video method.
During the pandemic around 2021, wool roll bread popped up and it took the internet on storm.
Looking like the roll of a wool, this bread was originally made with flour, yeast, eggs, whipped cream and dried fruits stuffing, making it the most soften bread ever had.
Thereafter it took many variations and turned into eggless version, without heavy cream as well and numerous varities of stuffings, ranging from sweet to Savory.
We have given it a vegan touch and omitted all the dairy products and filled with the savoury stuffing of tofu tossed in some veggies and simple seasoning.
We were of the opinion that we are not using eggs and cream in this bread, so this must not be very soft and fluffy but completely opposite to our assumptions, this vegan bread came out so fluffy and soft like a cotton candy.
We can proudly say that by far, this is the best bread recipe we have had ever made.
The best part of this wool roll bread is its beautiful appearance but immediately after seeing it, the second thought arises in mind that it looks so complicated so must be extremely difficult to make.
But believe us, making this vegan Wool roll bread was so easy and simple that even the novice baker can make.
INGREDIENTS USED IN MAKING WOOL ROLL BREAD
FLOUR : We usually bake with whole wheat flour but we tried this recipe with all purpose flour to see how light the bread comes out and it’s a fact that breads and cakes made with all purpose flour are more lighter and fluffy than the one made with whole wheat flour.
We prefer to bake with whole wheat flour because that’s the healthy option in comparison to APF.
So choice is yours. Bake either with APF or WWF.
YEAST : We have added active dry yeast which needs prior activation. However you can use instant yeast which is directly added to flour without prior proofing. Here’s a post in this blog about yeast and it’s activation.
SUGAR : Sugar helps in activating yeast. There’s no bar to any kind of sugar and you may use white granulated sugar, honey or jaggery powder. We have used brown sugar.
WATER : Water is needed for activating yeast and kneading the dough. For activation of yeast, water needs to be lukewarm. Very hot water will kill the yeast and cold water will not allow the yeast to activate.
In place of water, vegetarians can use milk as well.
OIL : Oil brings the moisture content in the recipe. Vegetarians can replace oil with butter.
However we have used milk and butter too, in this recipe but they both were vegans. You can use dairy if not vegan.
STUFFING : If talking about stuffing of this recipe, the list can go endless.
There’s variety of stuffings to this recipe varying from sweet to Savory, vegan to veg to non vegetarian.
This is your ability to attach wings to your imagination and go for any kind of stuffing you like.
STEP WISE PICTORIAL RECIPE OF VEGAN WOOL ROLL BREAD RECIPE
1.Take 1/2 cup warm water in a bowl and add 2 tbsp sugar. Mix.
2. Add 1 tsp yeast, mix and let it rest for 10-15 minutes.
3. After the said period, yeast turns frothy and bubbly which means it is properly activated.
4. Add 2 cup flour, 1 tsp salt and 2 tbsp oil.
5. Give them a good mix without adding water.
6. Now start kneading the dough by adding water, little at a time.
7. Knead the dough for good 10 minutes.
8. Place the dough in a greased bowl and also apply oil on the dough.
9. Cover the bowl and place it at some warm place in the kitchen for fermentation for 1 hour.
PREPARATION OF STUFFING
10. Take 1 tbsp oil and 1 tbsp butter in a pan.
11. Add 1 tbsp chopped garlic and let garlic turn slightly brown.
12. Add 2 tbsp chopped onion, 2 tbsp chopped capsicum and 2 tbsp sweet Corns. Saute for a minute.
13. Add 1/2 tsp red chilli flakes, 1/2 tsp oregano, salt to taste, 1 tbsp red chilli sauce and 1 tbsp tomato ketchup. Mix well.
14. Lastly add 100 grams of cubed tofu and give a good mix.
15. Take the pan off the heat to cool down completely.
MAKING OF BREAD
16. Uncover the dough after 1 hour. It must be doubled in size by now.
17. Knead it again just for a minute.
18. Divide the dough in 5 equal parts. You can weigh them for proper division.
19. Take one part and roll it like a ball.
20. Place this ball on a flour dusted surface.
21. Roll this ball in an oval shape.
22. Leaving about 2-3 cm portion from one side, start cutting the dough lengthwise into thin strips in such a way that it looks like fringes.
23. Put about a tablespoon of tofu stuffing on the side which was intact.
24. Gently fold the sides so that stuffing doesn’t come out.
25. Starting from the stuffing side, start rolling the oval dough till the end.
26. Place this roll on the side of the baking tin which is lined with greased butter paper.
27. Repeat the same with the rest of the four dough balls.
28. Cover the baking tin and place the tin at some warm place in kitchen for 30 to 45 minutes.
29. After the said time is over, uncover the baking tin. Rolls have enhanced in size.
30. Mix 1/2 tsp of sugar in 2 tbsp of milk (plant).
31. Brush this milk over the rolls.
32. Place the baking tin in a pre-heated oven @200°C for 20-25 minutes in the middle rack with both the rods on.
33. Take the tin out and place it on cooling rack.
34. Immediately brush the hot bread with melted butter (vegan).
35. After 15-20 minutes when the bread turns slightly cool, take it out of the baking tin and transfer to cooling rack.
36. Cover the bread with damp cloth for 15 minutes.

Ingredients
1 cup = 250 ml
FOR ACTIVATING YEAST
- 1/2 cup warm water (125 ml)
- 2 tbsp sugar
- 1 tsp yeast (we used active dry yeast)
FOR KNEADING DOUGH
- 2 cup All purpose flour (250 gram)
- 1 tsp salt
- 2 tbsp oil
- Water as required
FOR STUFFING
- 1 tbsp oil
- 1 tbsp butter (we used vegan butter)
- 1 tbsp garlic (chopped)
- 2 tbsp onion (chopped)
- 2 tbsp capsicum (chopped)
- 2 tbsp sweet Corns
- 100 gram Tofu (cut into small cubes)
- 1/2 tsp red chilli flakes
- 1/2 tsp oregano
- 1 tbsp red chilli sauce
- 1 tbsp tomato ketchup
- Salt to taste

- Dry flour for dusting
