Made with the very basic ingredients from the kitchen, this culinary masterpiece is delightful, festive and bursting with cranberry goodness.

INGREDIENTS USED

 

FLOUR : Cakes are generally made using all purpose flour but this cake is made with whole wheat flour. Wheat flour cakes are bit heavier and denser than the white flour cakes, but if you are looking for only & only healthy options, go no beyond wheat flour. Though, yes though having APF occasionally is of no harm.

CRANBERRIES : We wanted to make Holiday Sangria, so was looking for fresh cranberries, but alas couldn’t find. Hence bought a pack of dried cranberries. After making Sangria, few were left, so used in the cake.

JUICE : We have added canned juice which was already sweet. If you are using fresh juice or canned juice but unsweetened, then enhance the amount of sugar in the recipe.

If you get the fresh one, go ahead and note that they don’t need to be soaked in Cranberry juice initially.

SUGAR : We have used bura sugar which comes in a powdered form. If you are using granulated sugar, better to powder it first so that it get dissolved very quickly.

OIL : Use any neutral flavoured oil. Don’t use any other oil having strong pungent flavour and smell.

CORN FLOUR: This is called corn starch outside India. It is added just to give a support to the cake in standing tall. You can simply skip if don’t have.

LEAVENING AGENTS: Baking powder and baking soda make the cake soft, light and fluffy.

SALT : Just a dash of salt in any sweet recipe helps in enhancing the taste of the dish.

Vegan cranberry cake with dried cranberries

STEP WISE PICTORIAL RECIPE OF VEGAN CRANBERRY CAKE WITH DRIED CRANBERRIES

1. Pre-heat oven @180°C for 10 minutes with both the rods on.

2. Take a bowl and add 1 cup cranberry juice, 1/4 cup oil & 1/2 cup powdered sugar. If you don’t have cranberry juice, see the notes below.

3. Then add 1/2 cup dried cranberries.

4. Mix well and rest for 15 minutes.

5. Put a sieve on the bowl and add 1.5 cup whole wheat flour, 1 tbsp corn flour, 1 tsp baking powder, 1 tsp baking soda and pinch of salt.

6. Sift into the bowl.

7. Mix using cut and fold method.

8. Pour the batter in a cake tin lined with greased butter paper.

9. Top with some Cranberries.

10. Place the tin in the middle rack of the oven & switch the rod setting to lower on only and bake for 20 minutes.

11. After 20 minutes, bake the cake further for 15 minutes but this time with both the rods on.

12. Check the doneness by inserting the toothpick.

13. Let the cake cool down for 15 minutes on cooling rack.

14. Thereafter take the cake out of tin and let it cool completely on cooling rack.

Cut into slices and enjoy.

NOTES

1. To make Cranberry orange cake, use orange juice in place of Cranberry juice.

2. You can use milk of your choice instead of any of the juices. Yes, the juice gives more intense flavour to the cake.

1 cup = 250 ml

  • 1.5 cup whole wheat flour (210 gram)
  • 1/2 cup powdered sugar of your choice (100 gram - we used bura sugar)
  • 1 cup fresh cranberry juice (250 ml- unsweetened)
  • 1/4 cup oil (60 ml)
  • 1/2 cup dried cranberries
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp corn flour
  • Pinch of salt
