Shalgam ki sabzi recipe is a vegan and gluten-free dry curry made in a basic style using minimal and regular ingredients from the kitchen.

Turnip, which is called Shalgam, also spelled as Shaljam in Hindi is a vegetable commonly grown and available in winter states of India and Middle & Eastern Asia.

As the winters have initiated in India, so this is one of the must recipe in the Kitchen. Gets ready under 60 minutes, this delicious recipe goes well with roti/chapati/Indian flat bread.

This white base and purple topped round-shaped vegetable might not be common and famous everywhere being underrated, but the number of health benefits it is loaded with will surely make you fall for it.

Full of anti oxidants, vitamins, minerals and dietary fiber, this vegetable has all that abilities which can pull you towards itself besides just being tasty.

As far as ingredients are concerned, they are regular and basic but one thing which is worth mentioning is that you shouldn’t skip ginger and garlic, especially ginger.

The reason for saying so is that turnip is of cold nature (tasir), so it is very important to add ginger and garlic or atleast ginger.

Rest all the ingredients are regular and basic which require no detailed discussion.

Though the recipe is very simple and basic and you need to cook anything separately but everything goes into pressure cooker in one go but there are 3 important tips without which this sabzi will not taste good even if you have used all the ingredients properly. The three tips are :

  1. Ginger, rather loads of ginger. This sabzi should be rich in ginger because the taste of ginger compliments with the taste of turnip so well. 
  2. Once the turnip pieces turn soft, they need to b mashed well. This sabzi in the shape of pieces will not taste good.
  3. The last one is roasting. This will enhance the flavours and the sabzi will turn more delicious.

STEP WISE PICTORIAL RECIPE OF SHALGAM KI SABZI RECIPE

 
Peel and cut turnip in pieces and put in water. Water will wash them away and also prevent them from fainting.
Heat oil in pressure cooker. Add tomatoes, onion, green chilies, garlic and ginger, cumin seeds, kashmiri Red chilli powder,  turmeric powder, coriander powder and garam masala.
Also add turnip and water.
Put a lid and pressure cook for 5-6 whistles.
When the pressure releases on its own, open the lid and mash the turnip while keep cooking on low heat. This time there’s ample of water in them.
After couple of minutes, the water will evaporate. Keep cooking while stirring.
Turnip will begin to stick very gently to the base of the pressure cooker. Let turnip roast like this. Keep cooking and keep scraping.
Roast turpin for 8-10 minutes but make sure it shouldn’t get burnt. 
Shalgam ki sabzi is ready. Serve hot after sprinkling roasted cumin powder over the top.

Ingredients
  

1 cup = 250 ml

  • 1 kg Shalgam
  • 2 onion roughly cut)
  • 3 tomatoes roughly cut)
  • 3 green chilies
  • 2.5 tbsp ginger (grated)
  • 3 garlic cloves
  • 1 tsp cumin seeds
  • 1 tsp Kashmiri Red chilli powder
  • 1/4 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • 2 tbsp mustard oil
  • 1 cup water
  • Roasted cumin powder for garnish

Instructions
