STEP-WISE PICTORIAL RECIPE OF TOFU KATHI ROLLS RECIPE
MARINATION OF TOFU
Take a bowl and add tomato ketchup, green chilli sauce, soy sauce, vinegar and ginger garlic paste. Mix well.
Add tofu and coat well.
Place in the refrigerator for 30 minutes.
PREPARATION OF DOUGH
Take flour, sugar, salt and oil in a bowl. Mix.
Add little water and knead into a tight dough. Cover and keep aside.
COOKING OF TOFU
Add oil in a pan and let it heat up. Add tofu pieces. Do not add the marinade sit at the bottom of the bowl this time.
Cook on high heat while stirring the pan. When tofu turns slightly brown in 2-3 minutes, add capsicum, carrot, onion, sweet corns, salt and pepper powder. Give it a mix. Also add the leftover marination sat at the bottom of the bowl.
Saute on high heat while stirring continuously for a minute or two. Don’t let the veggies loose their crunch. This is your stuffing. Keep aside.
MAKING OF PARATHAS
Divide the dough in 3 equal portions. Take one portion and roll it between your palms. Place a ball on clean surface slightly dusted with floor. Start rolling it with the help of a rolling pin. Apply oil and some flour over the surface of this disc.
Start cutting the disc into strips, using a knife or Pizza cutter, which must be as thin as possible.
Bring all the strips together making a kind of shredded log.
Now begin to roll the log inwards from one end to the last. Tuck one end in the middle of back side of the centre.
Roll it using a rolling pin.
Cook on tawa from both sides by applying oil.
ASSEMBLING OF TOFU KATHI ROLLS
Take the paratha but before that put a butter paper underneath. Arrange some of the stuffing in the very middle of the paratha. Place some thinly sliced onions.
Sprinkle bit of salt, black pepper powder, put some chopped coriander and pipe mayonnaise.
Roll the paratha tightly.
Then wrap it into a butter paper.

Ingredients
PREPARATION OF STUFFING
FOR MARINATING TOFU
- 250 gram Tofu (cut into cubes)
- 2 tbsp Tomato ketchup
- 2 tbsp green chilli sauce
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp ginger garlic paste
FOR COOKING TOFU
- 2-3 tbsp oil
- 1/2 cup capsicum (juliennes)
- 1/2 cup carrot (juliennes)
- 1/2 cup thinly sliced onion
- 2 tbsp sweet corns
- 1/4 tsp black pepper powder
- 1/8 tsp salt
FOR MAKING PARATHA
- 2.5 cup all purpose flour
- 1/2 tsp salt
- 1 tsp sugar
- 1 tbsp oil
- Water as required
- 2-3 tbsp flour for dusting
- 2-3 tbsp oil for frying parathas
FOR ASSEMBLING KATHI ROLLS
- Stuffing
- Parathas
- 1/4 cup thinly sliced onion
- Pinch of salt
- Pinch of black pepper powder
- Green coriander leaves (chopped)
- Mayonnaise for drizzling (we used vegan mayo)
