Tofu butter masala is the vegan version of India’s most popular vegetarian recipe Paneer Butter Masala.

And it is amusing to know that even paneer butter masala is also the vegetarian version of non vegetarian butter chicken.

Tofu butter masala is such a delicious and lucious recipe wherein roasted tofu cubes are cooked in a tomato based gravy infused with aromatic spices and finished with vegan cream.

In Tofu butter masala and paneer butter masala, there are two things in common: one, process and another is taste.

If one is not familiar with the taste of tofu, we bet, he will not be able to identify that this is tofu butter masala and not paneer butter masala.

Both the recipes are cooked in a similar manner and even the ingredients are same. The only replacements are Tofu with paneer and dairy butter & cream were replaced with vegan butter & cream.

However there’s another difference in both the recipes, and that is with respect to the way the main ingredient needs to be added herein.

In the making of tofu butter masala, you need to cook tofu, be it by baking, air frying or shallow frying as tofu has a bland taste.

But this is not necessary in case of paneer butter masala. You can add roasted as well as raw paneer as well.

The original paneer butter masala is generally served in resturants with naan. However you can have it with roti or rice as well. If be asked us about the best pairing, go for Naan only.

So without stretching the story too far, let’s go for the recipe.

STEP WISE PICTORIAL RECIPE OF TOFU BUTTER MASALA

COOKING OF TOFU

Cut Tofu into cubes of desired size.

Put them in a bowl and add salt, black pepper powder and oil.

 

Put a lid on the bowl and shake it well.

Arrange tofu on a baking tray or baking dish.

Bake tofu @180°C for 25 minutes. Instead of baking, you can air fry or shallow fry as well.

PREPARATION OF GRAVY

Take a pan and add bay leaf, green cardamoms, cloves, black cardamom, star anise, cinnamon, nutmeg, ginger, garlic cloves, green chilies,cashews, green chilies, onion, tomatoes and water.

Put a lid and let it boil for 15 minutes.

Remove from the heat and let it cool down completely.

Remove star anise, bay leaf, cinnamon and black cardamom.

Then grind the mixture to a fine puree.

Pass the puree from the sieve for a smooth texture.

COOKING OF TOFU BUTTER MASALA

Add butter and oil in a pan. When butter melts, add caraway or cumin seeds and let them splutter.

Add red chilli powder, turmeric powder and coriander powder. Mix.

Then add puree and salt.

Let it simmer while stirring occasionally.

Cook until the gravy thickens and begins to leave the sides of the pan. The another sign is that oil is seen separating from the paste.

Time to add tofu and sugar. Give it a good mix.

Now add water depending upon your need for gravy.

Simmer for a minute.

Lastly add garam masala, kasuri methi and coriander leaves. Mix.

Transfer in a serving dish and top with vegan fresh cream and sprinkle of coriander leaves. Serve hot with rice, roti or paratha.

Ingredients
  

FOR COOKING TOFU

  • 250 grams firm tofu
  • 1/2 tsp salt
  • 1/2 tsp black pepper powder
  • 1 tsp cooking oil

FOR GRAVY

  • 1 bay leaf
  • 2 green cardamoms
  • 3 cloves
  • 1 black cardamom
  • 1 star anise
  • Small piece of cinnamon
  • Small piece of nutmeg
  • 1 inch ginger
  • 4 garlic cloves
  • 2 green chilies
  • 15 cashews
  • 2 green chilies
  • 1 big onion (roughly cut)
  • 3 tomatoes (roughly cut)
  • 3/4 cup water

FOR TEMPERING

  • 2 tbsp butter (vegan)
  • 1 tbsp cooking oil
  • 1/2 tsp caraway seeds or cumin seeds
  • Red chilli powder to taste
  • 1/4 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 1/2 tsp sugar
  • 1 tsp kasuri methi/dry Fenugreek leaves
  • 2 tbsp coriander leaves
  • 1 tbsp fresh cream non dairy
