WHAT IS MISTI ALOO PANTUA?

 

In Bengali, Mishti means Sweet.
In Hindi, Aloo is Potato &
again in Bengali language, Pantua is traditional deep fried Bengali sweet soaked in sugar syrup, much like Gulab Jamun.

MISHTI ALOO PANTUA & GULAB JAMUN

 

In other states of the country, this Bengali sweet is called by the name sweet potato gulab jamun so definitely a comparison is must between the two.

The making process of both these sweets is almost similar. You need to prepare a dough for both, then make smooth balls, deep fry to golden brown and then soaked in sugar syrup.

So reading the entire process signifies that this recipe is truly a sweet potato gulab Jamun but we do announce this loud and clear that in taste, mishti aloo pantua is no way even near to the taste of traditional gulab jamuns.

Hence, if you expecting the taste of gulab Jamun from this recipe, then stop your expectations.

INGREDIENTS USED IN SWEET POTATO GULAB JAMUN

 

SWEET POTATOES : Sweet Potato is a super food which is very versatile at the same time because with this one ingredient, you can make sweet, savoury or salad recipes even.

We have boiled the sweet potatoes but you can also roast them in microwave like we did here.

ALMOND FLOUR : Almond flour not only adds richness to the recipe but helps in bringing the dough together.

This also makes the recipe gluten free.

However, you can use 1 tbsp of all purpose flour or wheat flour in place of Almond flour.

SUGAR : Sugar is used in making the sugar syrup. We have used shakkar to make the recipe healthy, but you please feel free to use refined sugar.

CARDAMOM : Cardamom is for flavours. It is added twice, one in dough and another in the sugar syrup.

ROSE WATER : Rose water is for fragrance and gives the recipe a touch of gulab jamun, though recipe doesn’t taste like gulab jamun.

BAKING SODA : It gives softness of fluffiness to each ball of the recipe, though it is mentioned as optional.

SALT : If you are thinking that what a salt doing in dessert, then let us tell you that a pinch of salt in sweet dishes always help in enhancing the taste and flavour of the dish.

PRO TIPS FOR PERFECT MISHTI ALOO PANTUA

 

1. If you are microwaving sweet potatoes for boiling, then don’t over do because after certain time, sweet potatoes will begin to loose their moisture, which otherwise is much needed for this recipe.

2. Mash the sweet potatoes very well without leaving even a single chunk of it.

3. If you are using maida or wheat flour, then don’t over mix the dough. Gluten will form and your balls will turn hard. As a result, they will not soak the sugar syrup.

4. Make the balls smooth otherwise they will break while frying.

5. Do grease the air fryer basket and don’t overcrowd it at the same time.

6. Keep shaking them at certain intervals so that they get cooked from all sides.

7. We don’t require any consistency (one thread or 2 threads) of sugar syrup. It should just be slightly thick and that’s enough.

8. At the time you are adding fried balls to the syrup, balls must be warm otherwise they will not soak the syrup.

9. Also at the time of dropping the balls in syrup, syrup should be slightly warm. Do note, if the syrup is completely cool, balls will not soak syrup. And if you syrup is too hot, balls will break immediately.

 

 

STEP WISE PICTORIAL RECIPE OF MISHTI ALOO PANTUA

 

FOR BOILING SWEET POTATO

1. Take a wide and deep pan with water and place sweet potatoes in it.

2. Boil the sweet potatoes for 10-15 minutes or until they turn soft and tender.

3. Take Potatoes out of water and let them turn cool so that you can touch them comfortably. In the meantime let’s make sugar syrup.

MAKING OF SUGAR SYRUP

4. Add water, sugar and cardamoms in a pan.

5. When the syrup begins to boil, let it boil just for 3 to 4 minutes. We don’t need any thread consistency but just only a slightly thick syrup.

6. Switch off the heat and add rose water & lemon juice. Keep aside.

MAKING OF JAMUNS

7. Peel the sweet potatoes.

8. Place them in a wide vessel where you can conveniently handle them with free hand.

9. Start mashing the sweet potatoes and mash them in such a way that there remains no chunks of sweet potato.

10. Add almond flour, cardamom powder, salt and baking soda.

11. Bring the mixture together but do not knead it.

12. Cover the dough with a damp cloth and leave it to rest for 10 minutes.

13. Now start making smooth and crack free balls out of the dough. Big or small, choice is yours. We managed to make 30 balls out of entire dough.

FRYING OF BALLS

14. Grease the air fryer basket with oil. (In case you are deep frying them, heat oil to moderate warmth and then deep fry balls on low heat until deep brown.)

15. Arrange the balls in the basket of air fryer. Do not overcrowd the basket.

16. Apply oil all over the balls. You can also use desi ghee, if not vegan.

17. Switch on the air Fryer to 20-22 minutes @180°C.

18. But during the entire process, pause the air Fryer 3 to 4 times, shake the basket and apply some more oil on all the balls.

19. Air Fry till the balls turn golden brown from all the sides.

20. Dip them in sugar syrup which must be slightly warm at that time. Remember, syrup should neither be completely cool nor boiling hot.

21. Let balls remain soaked in syrup for 15 to 20 minutes.

Thereafter you can serve them. They taste so good if served chilled.

NOTES

1. Instead of air frying, you can adopt the traditional method of deep frying them.

2. You may use oil or desi ghee for frying but do note, that fry balls on low heat and moderate hot oil. If oil is excessively hot or heat is too high, balls will turn black from outside immediately, but remain raw from within.

3. As each air fryer is different, so your frying time may be differ to our’s.

Ingredients
  

FOR BOILING SWEET POTATO

  • 500 grams sweet potatoes
  • 5-7 cup water

FOR MAKING SUGAR SYRUP

  • 1 cup water
  • 1 cup sugar (we have used shakkar. You can use normal refined sugar)
  • 3-4 green cardamoms
  • 1 tsp rose water
  • Few drops of lemon juice

FOR MAKING JAMUN

  • Boiled sweet potatoes
  • 1/4 cup almond flour (*or 1 tbsp all purpose flour)
  • 1/4 tsp baking powder (optional)
  • 1/2 tsp cardamom powder
  • Pinch of salt

FOR FRYING JAMUN (in Air Fryer)

  • 1-2 tbsp of oil (you need too much oil if deep frying)

Instructions
