A simple cake made up of golden raisins using no dairy, no artificial sweetener and no fruits, but the sweetness is derived from the raisins itself.
There’s no use of fruits even for the sweetness and everything is Raisin.
We have made it in the utmost healthy way, by not even using all purpose flour. But if you like, feel free to go for it.
Usually a cake calls for vanilla essence but we have used cinnamon powder in this recipe. Additionally you can go for nutmeg and cloves powder as well because all these are going to compliment the fruity flavor of raisins. But the quantity as a whole shouldn’t go beyond 1 tsp.

STEP WISE PICTORIAL RECIPE OF SUGAR FREE VEGAN RAISINS CAKE RECIPE:
Take raisins in a bowl and add hot water in it. Soak them for 30 minutes.
Transfer the raisins, along with the water in which they are soaked, in a blender jar.
Blend them into a fine puree.
Transfer the puree in a bowl.
Add oil and vinegar.
Give a good mix.
Put a sieve over the bowl. Add flour, baking powder, baking soda, cinnamon powder, salt and raisins.
Sift them into a bowl.
Mix by using cut and fold method. Here if you feel that batter is slightly thick, you can add bit of the water, just spoon by spoon.
Add raisins.
Mix them too.
Pour the batter in 6 to 8 inches baking tin lined with greased butter paper.
Bake in preheated oven @180°C for 40-45 minutes.
Check by inserting a toothpick, if it comes out clean, it’s a sign that cake is properly baked.
Let it cool down a bit for 15-20 minutes.

Ingredients
1 cup = 250 ml
- 1.5 cup golden raisins (225 gram approx)
- 1 cup hot water
- 1.5 cup whole wheat flour (180 gram)
- 1/2 cup any neutral oil (125 ml)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon powder
- 1/4 tsp salt
- 1 tsp vinegar or lemon juice
- 1/4 cup raisins
