WHAT ARE SOFT DRINK MUFFINS/CAKE?
Soft Drink Muffins are the Muffins which are made using soft drink. In these type of muffins, you will not get the taste of soft drink in your Muffins but only the liquid content of Muffin/cake batter is provided by soft drink instead of milk, curd or water.
WHY TO MAKE SOFT DRINK MUFFINS?
There are two reasons to make soft drink Muffins:
One, an exciting experiment.
Two, utilising the leftover cold drink.
Let’s explain both reasons one after another.
Baking a cake using milk, curd, eggs or water is something very common and regular. And kitchen is the place where you would love to try new things. So baking a muffin with soft drink is an exciting idea to try something new.
The second reason is the utilization of leftover cold drink.
It happens in every house that you buy a fresh bottle of cold drink. Uses one or two glasses and keep the rest in refrigerator.
Even the lid of the bottle is tightly closed, the gas (carbon dioxide) remains very less or even totally leaked after 1-2 days and there remains only a coloured liquid left in the bottle, only taste like sweet water.
Such sweet water tastes not good and neither you can serve it to the guests or even can’t drink yourself.
So the only option left is to throw it away.
Here we have brought the way to utilize that leftover coloured sweet water, which few days earlier, used to called as cold drink…lol.
WHICH COLD DRINK YOU CAN USE?
There’s no bar to the flavour of cold drink you can use and go far dew, coca cola, ThumpsUp, sprite, Mirinda or even Soda water.
If you give a twist to the recipe using different soft drinks, that’s going to be very exciting.
For eg., if using Thumpsup or Coca cola, better to go for chocolate cake.
If using Mirinda, orange cake will go great.
If having leftover Sprite, go for anything. Likewise if using Soda water, you can bake a cake of any flavour. The only thing to take care of is amount of sugar.
STEP WISE PICTORIAL RECIPE OF SOFT DRINK MUFFINS RECIPE
1. Keep the cold drink out of refrigerator to let it come to room temperature.
2. Add 1/2 cup + 2 tbsp of powdered sugar and 1/4 cup oil in a bowl.
3. Give it a good mix.
4. Put a sieve on the bowl.
5. Add 1.5 cup all purpose flour, pinch of salt and 1 tsp baking soda.
6. Sift the ingredients into the bowl.
7. Add 1/3 cup tutti fruity directly to the flour so that tutti fruity gets coated with the flour.
8. Give it a good mix.
9. Further add 1 tsp of mix fruit essence and mix well. If you don’t have fruit essence, you can use vanilla essence.
10. Now start adding soft drink little by little and keep mixing.
11. Firstly we added 1/4 cup of soft drink, mixed, again 1/4 cup of soft drink, mixed and lastly again 1/4 cup of soft drink. So total 3/4 cup of soft drink was added to make a thick yet flowing consistency of batter. The quantity of soft drink may vary depending on type of flour and sugar you are using, so never add the entire soft drink in one go.
12. Give a good mix.
13. Lastly add 1 tsp white vinegar and mix well.
14. Pour the batter in greased muffin tins. Instead of muffin tins, you can use a baking tin to make whole cake.
15. Bake the muffins in pre-heated oven @170°C for 20 to 25 minutes in the middle rack with both the rods on.
16. Bring them out and cool completely.
Soft Drink Muffins are ready. Enjoy.
NOTES
- To make this recipe, you can even use the leftover cold drink which has lost it’s carbon dioxide (gas) or is left with very less gas.
- If you don’t have white vinegar, then add 1 tsp of baking powder. In that case, reduce the amount of baking soda from 1 tsp to 1/2 tsp.
- Instead of soft drink, you can use soda water as well. But in that case, add 3/4 cup of sugar.

1 cup = 250 ml
- 1.5 cup all purpose flour
- 1/2 cup + 2 tbsp Sugar (powdered)
- 3/4 cup or as per need soft drink of any flavour (We used dew)
- 1/4 cup oil

- 1 tsp mix fruit essence (or vanilla essence)
- Pinch of salt
- 1 tsp baking soda
- 1 tsp white vinegar
