Sabut pyaz ki sabzi with step wise pictorial and video method.
SABUT means Whole and PYAZ is onion.
So Sabut Pyaz ki Sabji means whole onion curry i.e. onions are cooked without chopping.
This is the cuisine from Rajasthan and one such delicious recipe which requires no fancy or complicated ingredients.
Vegan and gluten-free, this sabji is the best alternative when there’s nothing to cook in the kitchen and the vegetables tray of your refrigerator is also empty.
Not just empty, but what happens that sometimes you are not in a mood to cook at detail so want something easy peasy, simple, quick yet delicious.
This recipe fulfills all the said requirements.
All the ingredients of this recipe are very basic and you will feel as if you don’t require anything. Some add curd also in addition to tomatoes and that is your personal choice.
A bit similar to dum aloo made with baby potatoes, this mouthwatering recipe is worth for carrying in tiffins too.
STEP WISE PICTORIAL RECIPE OF SABUT PYAZ KI SABZI
1. Peel 300 gram onions and wash them.
2. Mark a cut in the shape of × at the base of the onions but they should remain intact from the bottom. Refer video for easy understanding. Keep aside.
3. Add 2 big tomatoes after cutting them roughly, small piece of ginger, 2-3 garlic cloves and 2 green chilies in a grinder jar.
4. Grind them to a fine paste. Keep aside.
5. Add 3 tbsp of oil in a pan and let oil smoke first. As it is mustard oil, so cooking it to the smoking point is must. Otherwise you can use any oil you add in your daily cooking.
6. Put onions into oil.
7. Saute for 2-3 minutes on moderate heat. Onions need not to be made brown but just come to translucency.
8. Remove the onions from the oil.
9. Add 1 tsp cumin seeds, 1/2 tsp Nigella seeds/kalongi and 1/2 tsp Rai/mustard seeds. Let cumin splutter.
10. Add tomato paste.
11. Also add red chilli powder according to your taste, 1/4 tsp turmeric powder, 1/4 tsp coriander powder and salt as per taste. Mix.
12. Let tomatoes cook on moderate heat.
13. After 5-7 minutes, tomatoes will begin to leave the sides of the pan and started releasing oil. Its a sign that tomatoes are properly cooked.
14. Add 1/3 cup water.
15. Let water come to boil.
16. Add onions and give a good mix with light hands.
17. Put a lid and let onions cook for 5-7 minutes on low heat.
18. Add 1 tsp dry Fenugreek leaves/kasuri methi and 2 tbsp coriander leaves. Mix.
Sabut pyaz ki sabji is ready. Enjoy.
